COMMERCIAL DESCRIPTION
Imperial Stout is the biggest of the black beers and to drink Baird Dark Sky is to experience a foreboding libation. The aroma is gorgeously complex (dry hopping with American Centenniel & Amarillo hops) and the flavor is a stunning smorgasbord (chocolate, toffee, herbs, coffee, licorice, etc.). The mouthfeel is soft and enveloping. The finish is piquantly acrid and warming (alcohol approximately 7.6%).

Draft in Washington DC, just a few days after returning from Tokyo. Apparently the beer beat me here. Almost black, nearly flat. Aroma of Hershey’s syrup. Taste is sweet milk chocolate, bitter finish. Acceptable.

Bottle at RBJG 2 Grand Tasting. Black colour with a small beige head. Almost no lacing. Sweet plum, fruit aroma. Rather sweet plum, dark fruit flavour.

Bottle from Tokyu Food Show. Very dark brown black, thick golden bubbly creamy head. Aroma is roasty, bit of chocolate, coffee, maybe oaty or grainy. Taste is nice, bit of bitterness, coffee, no sweetness, something bit fruity. Some vanilla maybe. Pretty drinkable, and no hint of the alcohol. Not ultra thick but a bit sticky. Nice though.

Bottle purchased at Hunger Mountain Co-Op, Montpelier, VT. No bottle dating anywhere. This has been sitting in my clear since August. Hard to know how old it is. The beer poured a deep brown/ almost black color with thin tan head that only showed a ring around the snifter. Aroma is roasted malts with mild notes of chocolate and slight coffee. Mostly the same with some sugar upfront and mild licorice undertones. The hops are almost totally gone. Not a huge problem for me. The body leans on the full side with no ABV being detectable. Overall it’s a drinkable Impy stout, slightly above average. Nothing about it makes me want to run out and grab another bottle yet it does have some nice flavors.

A very vigorous pour into my Lost Abbey Teku glass produces a two-finger thick, lightly browned head. The beer is a concentrated brown, almost perfectly black color that doesn’t pass any light. The aroma smells of smooth, roasted / burnt prunes, touches of fruity alcohol, rich toasted nuttiness, and even some touches of sherry. There is a soft, almost mustiness to the nose, and as the beer warms up touches of roasted, dark, sweet rum, molasses, and perhaps a touch of licorice root are also noticeable.

Smooth, and only very faintly carbonated, the beer is a lot drier than the fruit nose might have suggested. Dry, bitter, roasted, and burnt in the finish, this offsets the hint of sweetness that is found up front. Rich, nutty, slightly sherry like oxidized malt notes add a nice roundness to this beer. A touch of chalky character is in the dark malt here, and there is a bitter, cold coffee roasted quality to the malt as well. Fruit flavors of burnt plums, concentrated raisins, and perhaps some touches of figs provide some interesting character. The beer is somewhat light bodied for an Imperial Stout, I reckon it has lightened up a bit with age, but there is some viscosity here that sits on the palate before it cleans up in the finish.

This has aged quite nicely over the years; it could certainly use some more carbonation, but the beer stands up pretty well without it.

Bottle purchased at the Party Source. Darkest brown in color with a medium tan head. Malty and chocolatey nose with some roast. Malty and chocolatey flavor with a bit of alcohol before a roasty finish.
