Imperial Stout is the biggest of the black beers and to drink Baird Dark Sky is to experience a foreboding libation. The aroma is gorgeously complex (dry hopping with American Centenniel & Amarillo hops) and the flavor is a stunning smorgasbord (chocolate, toffee, herbs, coffee, licorice, etc.). The mouthfeel is soft and enveloping. The finish is piquantly acrid and warming (alcohol approximately 7.6%).

bottle last night, pour is black as the ace of spades thin head with some lacing, smells of coffee, sweet milk and chocolate, mouth feel is nice and thick. taste is of coffee chocolate and vanilla with a mild alcohol warmth. Awesome beer.

A dark pour with a good head job makes me happy upfront. I love the pancake. Dark roasted aromas. Full nectar with superb effers. Good creamy texture. A defined roast component defines this with the intrusion of sweetness to follow. High cocoa essence resolves to a long finish.

Bottle sampled at SIB, pours black with a tan head. Aroma of roasted malt, chocolate and coffee. Flavour of extremely smooth oatmeal, roasted malt and chocolate. Outstanding imperial stout.

The first whiff of this beer was surprisingly yeasty, but subsequent sniffs caught the aroma of a good imperial stout: smoky with tones of roast coffee, molasses and unsweet chocolate, as well as a hint of miso. It pours a rich, opaque sable with a fairly thick, fine-bubbled tan head that leaves quite a bit of lacing. Mouth filling smoky flavor has tones of quality coffee, chocolate, caramel, licorice and toffee. There is also a fair alcohol kick, but this complements the rich flavor rather than overwhelming or even dominating it. Flavor is quite tingly and edgy, hardly smooth, thanks to a strong fizz and the alcohol bite. Recommended to all stouties.

Pours completely black. An impressive, beige, creamy, small, head. Fine duration. Aroma is wonderful. Lots of roasted malts, dark chocolate, coffee, some figs and a bit of tobacco. Nice. Low carbonation, super creamy mouthfeel. Flavour is wonderfully balanced. Quite sweet, some alcohol burn, nice dark chocolate and a light hoppy touch. It is difficult to actually find distinct flavours, as this is so wonderfully well-composed. There is vanilla, figs, ginger, plums and a little coffee as well. Truly amazing

Pours dark with at small creamy beige head. Lovely aroma of chocolate, prunes and plummes, vinious and roastet malt. Flavour is dry roastet malt, coffee, chocolate, prunes and plummes and a nice viniousity - very very nice. Palate is very soft and oily, the flavours covers your mouth, and stays there - especially the roasted malt and coffee.

Bottled. Pours out in an opaque really dark brown colour with a small beige lasting foam. Rich and deep velvety soft malt aroma of roasted malts, plums, dark chocolate, mint and figs. Full-bodied and chewy flavor of roasted malts, almonds, figs, raisins and plums. Velvety mouthfeel. Long warming finish of coffee, dark chocolate, vanilla, plums and figs. Delicious stuff!

[bottle 633 ml] Dark black pour with a very creamy looking tan head. Aroma is loaded with chocolate, toffee, caramel, coffee, and dark malts. Flavor is very dark and deep with tons of chocolate, coffee, some cream, plums, oak, vanilla, and a very bitter coffee and hop finish. Feels like liquid silk and warms on the way down. Very impressive.

633ml Bottle labeled as 9% Alc/Vol. Pours a very dark, not extremely viscous, brown with a dark beige frothy bubbly head, pours more like a dark IPA than an IS. Typical Baird hop aroma, perfumy, really floral/botanical, with some mellowing roast and sweet caramel underneath, a bit of wood and alcohol as well. Oh wow, quite tasty and aggressive first taste, really coats the mouth and tongue. That is delicious, the perfumy hops annoyed me a bit in the Baird Pale, however they really come alive with the sweet roasty malts. This really is a dark IIPA. Its almost sweeter than it is dark and bitter, a bit of honey, definitely sweet-cream, velvety rich chocolate dark syrup, floral hops, a touch of resin and citrus. Sweet-cream and honey finish with a long chocolate aftertaste with a slight dry bitterness. Medium/full bodied, oily, hardly any carbonation, close to flat aside from a light sizzle. A chocolate IIPA, rich and decadent without being the slightest bit cloying. Easy drinking with a slight burn. Not a beer for aging. Something new and unique to me.

Bottle shared by nbutler11 at the 09er. Pours a disturbing beautiful deep blue from the unusually sized bottle. Very smooth and clean without being crisp... which I liked. Nice mellow roast, dark fruit, double-smooth coffee and slight vanilla. Supreme beer and the best I have had from this island.
