COMMERCIAL DESCRIPTION
Experimenting with various yeast strains, particularly Belgian ones, is one of the joys in the work of a small-scale craft brewer. In this Baird interpretation of a Belgian-style Dubbel we ferment with a yeast thought to be derived from the wonderful Trappist brewery Rochefort. Five malted grains and two types of sugar - Japanese rock sugar and black sugar - provide richness and depth of flavor without excessive heaviness or fullness. The hopping is light at only 22 IBUs and no aroma additions are made. One-year of maturation in the package contributes a round, almost vinous character. This monkish brew is meant for the contemplative drinker and is best enjoyed on a brisk autumn afternoon or evening.

At the Nakameguro Taproom. Reddish, Dark Brown. Dark, Fruity aroma. Thin head Taste of Peaches/plums, very light sourness in mniddle meduim body, sweet finish.

2008 version, on draught a year later at Nakameguro. Dark brown with orange and a thin, lacy head. Aroma of caramel, chocolate, and Belgian yeasts. Flavor: chocolate and caramel, slightly fruity with a slight vinous taste. Belgian yeast character not terribly evident. Decent flavor but not right on.

Dark red body with a tan head. Fruity aroma thta is lightly tart, spicy yeast, and dark sugars. Mild flavor for a belgian style, but thats not surprising for a Japanese brew of this type. Classic dubbel qualities are there, just a little muted. Dark fruits, sugar, spice, yeast and light malts. Body is very nice with a little lighter than normal carbonation for the style, which leads to a more drinkable brew. Highly enjoyable though maybe a little sweeter than I would like. I also enjoyed the free pint given to me at the Taproom. God knows Ive drank enough Baird to cover it, ha.

Cloudy dark brown color. Almost no nose, with only faint candy sugar showing up. Mouth is milk chocolate and nutty with some candy sugar. Almost frangelico like. Much better depth in mouth than nose. Nutty chocolatey finish.
