COMMERCIAL DESCRIPTION
There is a tradition in the world of ale brewing to craft celebratory holiday ales that incorporate festive spices and perhaps other special ingredients. Baird Jubilation Ale is brewed within the context of this tradition and in the spirit of joyful celebration. A hearty ale with a rich malty base and soothing alcoholic warmth (ABV 6.5%), Jubilation Ale is made luxuriant by deft additions of two wonderful ingredients: (1) fully ripened figs candied in the country kitchen of our friend, Shoko-chan, and (2) cinnamon twigs culled from a Japanese Nikki tree. A sublimely balanced interplay between sweet and spice reminiscent of the yin-yang duality of life results. The ruby-red hue and the wafting aroma of cinnamon warm the heart and furbish the soul.

Tasting - The Wine Source. Copper, thin white head. Citric sherry and grape aromas warm to light swirls of spiced cinnamon pears. Vinous and spicy with a touch of backend cardboard throughout. Light to medium bodied, soft carboantion, spiced fruity finish. Not my cup of tea, though fresh it might change my opinion...

Poured out an amberishy red brew that is fairly hazy with a medium sized off white cap. This has a nice, soft aroma of spices that consist of cinnamon, figs follow with some depth, caramel and bread, light fruity sweetness. Very good flavour of cinnamon, bread, white pepper, caramel and thickness with a consistency of uncooked dough. Figs, lightest of citrus, weak hops and a bit astringent at the bottom of my glass. Decent brew that I had no problem drinking a whole bottle of but don’t see getting this again.

7% an amber winter warmer on Tap at the cozy Baird Numazu Taproom. An amber pour with a light beige head. Malty sweet, spices, figs in the aroma. Great earthy+fruity taste, malty but with bucket loads of sweet figs with a bit of spices & a mild ascerbic puckering bitterness to it. More flavorful than I was expecting. A good surprise, but best in small amounts I think. Worth trying, quite unique.

UPDATED: JAN 5, 2009 Bottled; 2007 version. Caramel orange in color with a firm, off-white head. Aroma is sweet and spicy. Caramel apples, fruits, chocolate, cinnamon, nutmeg, and milky. The body on this one is near perfect for the flavor. Sweet malts, caramel, cinnamon, and some milk chocolate. Finish is a little salty, with nutmeg and light citrus tones. Excellent. (The 2008 version loses some points. Much less exciting with less pronounced spicing. Still good, but in the 3.6 range. Rating is still for the 2007 version)

Pours copper with a fading head. Nose shows sweet rich malt, with dried fruit and golden syrup showing through. Flavours are equally sweet but quite complex. Hints of eucalyptus, dried fruits and some spices. Pretty interesting (in a good way). Body feels too syrupy.

Amber pour. Light tan head. Caramel malt, honey, spices and fruit. Flavor has cinnamon, allspice, honey, and a bit of hops. Not bad.

Opaque brown with a thin off-white head. Aroma is figgy indeed, and sweet, with a bit of alcohol . Taste is the same with a spiced cinnamon bready quality. Dark fruit in the finish with alcohol and a slight sourness. $6/22oz

Appearance: deep garnet and cherry woods. A khaki head fades into a thin collar of lingering bubbles which try to crawl up the sides of my glass. Swirls thicker.
Nose: dark fruit forward with cinnamon in the back; meaty and moist. Crisp along the edges – apple skins. Dried figs and prunes. Earthen wood and fire in the background. Cinnamon is very subtle. Mulling spices and apples.
Palate: ooh – yummy. Medium weight, soft, bready. Fruitiest in the middle – figs, prunes, and pressed apples. Brisk. Essence of fall leaves, apple peel, and cinnamon sticks. Dry along the edges – fall leaves, earth, dirt. Not overly complex but damn good. Silky mouthfeel. Pears join the apples – juicy. Clean finish. Figs in the middle with dried raisins and prunes. Cinnamon is an essence.
Final Thoughts: wow. Baird Brewing always impresses. Always. I think part of that for me is the indigenous aspect – many flavor profiles are totally new and therefore totally intriguing, puzzling, and thrilling all at the same time. A fantastic beer.

Would have picked as an off-beat pale ale if drunk blind. Very well made; balanced and elegant in the extreme, even if the ABV is only 6.5%. Clean hops keep the beer zingy and sharp but there’s an unusual farmyard biscuity finish that I can only assume comes from the cinnamon and figs. Great session beer.

Another in a fascinating raft of unusual Japanese beers generously supplied to an Australian RB gathering by TimE. This Japanese take on a Christmas ale left me scratching my head in between writing notes like "peculiar" and "fucking weird". Burnt umber with a shallow head. Highly spiced aroma - cardamom, cinnamon, ginger and limes. Oily body. Strange mix of flavours, like a spiced lime shandy. Cinnamon again but dominated by strong citrus. The combination didn’t really work for me but it probably suffered from being poured in the midst of a long session. Would like to try again. (Bottle at Sully’s 2007 RB Sydney Xmas gathering)
