COMMERCIAL DESCRIPTION
There is a tradition in the world of ale brewing to craft celebratory holiday ales that incorporate festive spices and perhaps other special ingredients. Baird Jubilation Ale is brewed within the context of this tradition and in the spirit of joyful celebration. A hearty ale with a rich malty base and soothing alcoholic warmth (ABV 6.5%), Jubilation Ale is made luxuriant by deft additions of two wonderful ingredients: (1) fully ripened figs candied in the country kitchen of our friend, Shoko-chan, and (2) cinnamon twigs culled from a Japanese Nikki tree. A sublimely balanced interplay between sweet and spice reminiscent of the yin-yang duality of life results. The ruby-red hue and the wafting aroma of cinnamon warm the heart and furbish the soul.

Clear dark amber color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, caramel, thyme, cinnamon. Bottle. Poured clear reddish copper color with an average frothy off-white head that was mostly lasting with excellent lacing. Moderate to heavy dark fruit and spice aroma. Medium body with a smooth texture and soft carbonation. Medium spice sweet flavor with a medium sweet finish of moderated duration. Refreshing complex beer.

Bottle at SlutFest 2011 on 04/23/2011. Mostly clear copper body with a medium frothy off white head. Sweet fruit, caramel and light spice aroma with earthy notes. Sweet fruit, fig, caramel, light spice and earthy flavor. Medium full body with moderately low carbonation.

(bottle - 22 oz) Ruby red pour with a fizzy off-white head. Aroma is spicy with some hints of cinnamon, cloves, allspice, very light figs, and sugar. Flavor is very sweet and malty with hints of cocoa, honey, cinnamon, yeast, sugar, and light figs. Very sweet and spicy and rather cloying.

633 ml bottle from Plaza Liquors - Pours a hazy amber color with a one finger thick light tan head. Very light lacing. Aroma is light esters (fig) and caramel malt with a hint of spice (very light cinnamon). I’m not quite sure what to make of the flavor. I mainly detect some esters and caramel malt. I’m not quite sure what to make of this beer. All I know is that it’s not worth the $12 I paid for it.

Bottle at Hashigo Zake. Pours a beautiful radiant reddish amber, tan head.
Aroma has smooth chocolaty, fruity oddness. A big full bodied flavour, kinda of nutty with Belgian-esq flavours, wierd esters. In a good way. Spicces are minimal and no hint of the cinnamon.
Tart, bitter and fruity, interesting but not amazing.
