Rauchbier is an old German beer style, its origins go back to the 1500s where it was a prominent style in the district of Franconia and the town of Bamberg. ‘Rauch’ means ’smoke’ and this is the signature flavor characteristic of a Rauchbier. The smoked flavor is derived from drying green malt over a beechwood fire. Bock is a strong lager of German origin. Baird Rauchbock is a strong, malty, velvety smooth take on this old Franconia smoked style. 100 percent of the malt bill comes from Bamberg-based specialty malting company Weyermann (63% of which is beechwood smoked malt). The hopping is extremely light — just enough Halletau Tradition and Czech Saaz to balance the rich malt flavor. Rauchbock was brewed back in December 2012 and has been conditioning in our cellar for the past 8 months. This long maturation has brought the assertive smoke character into perfect balance.

chestnut color. The body is med full, the smoke is very subtle. A bit sweet and malty. The could just be called a bock. Fairly rich finish. Pleasant.

Tap at Tadg’s. Dark brown, cloudy, low head that disappeared quickly. Good smoky nose, caramel, chocolate. Flavor is not all that smoky, more chocolate and caramel, nice malts. Decent.

6.5% draft pint at Tadg’s during Happy Hour. A clear deep reddish brown. A really lovely smokey, bacon, malty & toffee/caramel aroma. Smooth medium body, with smoke, hints of bacon, sweet caramel malts & a bit of wine accents in the finish. A nice beer.

Tap at Gar Eden. Dark brown with small golden head. Aroma is smoke, bit spicy, meaty, malty. Taste is pretty good, smoke naturally, slight sweetness, something like burnt caramel, slight fruitiness, thinking of apples for some reason. Maybe bit of cherry. Big and malty again. Quite nice and not in your face.
