COMMERCIAL DESCRIPTION
This wonderful fruit ales’ dark color (hazy russet) belies its light touch and unvarnished elegance. Small additions of highly roasted caramel and chocolate malts joined together with a complex mixture of base malt (Marris Otter, Canadian Wheat and German Munich) lay a rich but not overpowering platform of flavor. Upon this foundation, the freshly squeezed sour juice and outer peels of the daidai fruit perform acts of magic. Spicy and tart citric notes play the underlying malt sweetness like a maestro. The result is a sublime interplay of gracefulness and rusticity.

My Bottom Line:
Caramel apples lightly roasting atop a well-positioned citrusy tartness end up balanced by the earthy hop finish. Yet another very drinkable and carefully crafted Baird fruit beer.

Further Personal Perceptions:
-A ring of foam circulates around the orangey copper.
-The daidai’s citrusy discourse is an able companion the grain bill.
-The body of this Baird fruit beer is just like most of the others: lean, lightly carbonated, and extremely drinkable.

A bit of a style mystery for me (later found out there is a fruit called Dai dai??). Soft hoppy nose with notes of Cointreau and orange peel. A soft Cointreau mouth, with little bitterness despite the aroma hops and Bairdfs love of bitter in most of his beer. Dry orangey finish. Not bad, but the beer makes much more sense now that I know its a fruit beer.
