Saison means "season" and this family of beers is thought to have originated in Wallonia in southern Belgium. Saisons were brewed in the winter at farmhouse breweries for the summer consumption by thirsty farmhands. While there is no exact flavor profile or processing technique that define Saison stylistically, common traits exist (e.g. relatively pale in color, moderate in alcohol, refreshing in a dry or sour type of way, etc.). Often spices and ingredients uncommon to beer but otherwise readily available on the farm are incorporated. Saisons are thus typically Belgian in their funkiness and individuality. Saison Sayuri is like its namesake -- a fascinating admixture of down-to-earth simplicity and understated complexity. Brewed entirely with pale base malts and Japanese candy sugar (except for a hint of roasted barely for color contribution), Saison Sayuri is relatively light in body and sprite in flavor. The nose is an immensely complex amalgam of aromas -- bubble gum-like phenolics from the Belgian yeast, floral and fruity notes from dry hopping, and a subtle hint of citrus and spice from the addition of Japanese daidai peels (daidai is a very sour type of Japanese orange). A splash of sour daidai juice also was added to the wort which manifests itself in a stealthily citric-sour finish.

on tap at the nakameguro taproom in tokyo. golden with not much sign of haze, minimal head but massive lacing. definite saison dupont yeast in the aroma, heaps of stuff happening - banana, orange pip, sweat + rexona, vanilla, wheat flakes, watermelon. maybe it was just from some recent sake tasting, but i discerned some fermenting rice as well. the finish was mouldy/barny and dry. all over the place, a fascinating beer

I think this is Bryanís first attempt at a Belgian style beer (please correct me if I am wrong). This was extremely interesting and perhaps one of his top three best. If you are looking for a extremely yeasty Bretta filled saison, this is probably not for you. However, this deep golden amber brew did show life in the nose with chocolate, raspberries, peaches, floral hops , earthy and barnyard notes. Not exactly bretta, but the yeast is definetely funky and phenolic. The yeasty character persists in the mouth with the similar complexity of the nose. Off dry, earthy, peaches, raspberry finish. WOW. Different than other saisons I have tried, but not out of style and certainly a high level complexity. Love it.

Draft courtesy of John, thank you sir! Hazy golden yellow color, medium white head. Aroma of white pepper, straw, subtle summer fruit. Taste is straw and hay with a bit of barnyard and citrus. Very nice.

thanks TimE! / bottle says 6.5% ABV / brown-orange, hazy body with a lingering, sparkly white head; smoky, floral, cookie aroma; smoky, sweet, a bit of banana, a little fruity, earthiness, creamy but with a sharp, smooth flavor, a little chunkier as it is colder; interestingly nice and nicer as it evolves being warmed!

24/07/2011 Brasserie 4:20 (tap). Bevuta al Baird Beer Festival. Dorata viva, limpida, con buona schiuma morbida, biancastra, abbastanza persistente. Aroma intenso floreale, speziato, fruttato (banana), lievito bene in evidenza e una punta di luppolo. In bocca Ť perfettamente aderente allo stile e davvero ben bilanciata, rinfrescante, beverina. Corpo medio, carbonazione corretta. Una gran bella birra, tra le migliori del birrificio Baird. Perfetta per líestate.

Draught at CBC 2012. Clear yellow - white head. Light malty, flowery, freshness, peppery, spicy notes, light bubblegum, nice bitterness. Lovely.

Quite enjoyable and remarkably easy to drink saison. Floral, citrus, yeast, herbal, lemon and lime notes. Finishes with mild sourness. Not as intense as a belgian saison but has the same qualities. Tasty.

Bottle at the Brewdog Camden. Hazy amber beer, good white head. Light palate. slight soft and just a little dry and the barest carbonated tickle! Mild creamy malt with mild soft fruits that include tinned peach juice. Finishes dry with mild minerals. A nice saison but itís all very light and fluffy!

In bottle. Pours a lemon yellow colour with a thin white head. A lovely aroma of mandarin, orange zest, white pepper, lemon, caramel and alcohol. Similar flavours with mild carbonation and an oily mouth-feel. Lingering lemon, mandarin and candy sugar.

Bottle, 12C. Cloudy gold with a white head. Gentle aroma is dusty with dough and citrus and spices. Light bodied and very soft in the mouth. Taste has bittersweet citrus, sugary dough, some boiled sweets, cloves, pepper. Gently bitter at the fairly dry finish. Spices creep up at the end. Not looking to knock your socks off, just provide some intrigue as you quaff. Good.
