COMMERCIAL DESCRIPTION
The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle pour. This one is a little different. A little light for an imperial IPA, but a lot of flavor. A lot of hops up front with a bitter finish. A boozy aroma, but it doesn’t really translate to the taste. Some citrus fruit and bread flavor as well. Unique, and I can say I really enjoy this.

Deep golden in the glass, small head. Fruity aroma like lemon. Starts mild-hoppy, hints of lemon, more and more grasy-hoppy. Finish with some bitter notes, all in all quite drinkable.

Bottle. Surprisingly thin given the style. Malt flavour is not as strong as it could be, meaning it kind of tastes like hoppy water. Aroma and drinkability boost the score a little bit

360 ml bottle bought at Craftissmo in Tsim Sha Tsui East.

Cloudy hazy light straw brown with lots of dirt-brown yeast sediments; Three-quarter finger head with crumpety off white foam which lasts for 2 minutes; Excellent sticky lacing with notable small carbonation; Very fragrant and sweet aroma of ale malt, with sharp grapefruit, mandarin, mango, pineapple, sugar, floral, strong pine, honey, orange peel, strong yeast, lemon and light grass; Medium sweet taste of Ale malt, with grapefruit zest, light pineapple, orange peel, molasses, strong pine, wood, light resin, yeast, strong lime and very strong sharp bitter hops; Mid to light body, thin but quite slick and oozy palate; Mouth feel has a proper feel of DIPA, but body is rather light, not as viscous as most D- / IIPAs should. Grapefruit is sharp, and the addition of mandarin orange is quite unexpected, but the overall fruitness is not enough and feel a bit empty; Medium sweetness is overwhelmed by piney, woody, resiny, and bitter 3Cs, but not much spice or earthiness in evidence. Hmmm…. Hoppiness is quite fragrant grapefruit zest, mandarin and floral in nose, citrus zest and piney, woody light resin in taste. Very sharp bitterness for a good, long lasting astringent finish; Very dry after taste, crisp and light bitter to mouth.

Comments: This one has better aroma than taste, with the mandarin being a bonus to an otherwise thin and not so strong DIPA. The fruits and hops taste is clinically competent but not quite enough for the style. Still I’m glad to try this for a change of scenery. "Close but no cigar" seems to be the motto of this brewery.

Bottle at the globe, hong kong. Hazy dark orange color, smooth white head. Malty aroma, hops and some fruits. Taste is better, malty body with fruity hops, citrus notes. Dry hoppy finish.

On tap @ Tadj in Kyoto, Japan. Aroma is faint earthy, hoppy, burnt caramel and herbs. Appearance is bright golden served with massive foam (Japan loves foam) Taste is smooth and creamy with notes of biscuit, bitter hops, strong herbs, butter, caramel mango and peach. Overall, an interesting IPA but not the best I’ve had in Japan.

Pours a hazy orange-amber with a persistent white head and moderate carbonation. Aromas of pine, lemon, pepper and a touch of sweetness. The taste starts out with a robust, lingering pine resin bitterness. That slips away toward the end, revealing some lemon, lime and black pepper. Really dry finish with a long spicy aftertaste. Nice Imp IPA.

Poured from a bottle in Tokyo. Hazy dark honey colored with a slight white head. Almost no lacing. Big aroma of floral hops. Floral hops flavor, not too bitter. Also not as big as expected for an imperial IPA. Pleasant bitter finish, but again, not overwhelming in intensity. Nice beer and worth drinking again.
