The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Tap.Dark amber colour with medium white head.Aroma is fruity of exotic fruits and toffee caramel but most of pineapple and mango soft and smooth but with some harsh finish overall.

12oz bottle poured into a long stemmed tulip glass on 16-Nov-2015. Hazy amber, almost murky n colour with an off-white head. Aroma of citrus, caramel and pine. Sweetness of the malt upfront followed by tropical fruit and bitter graoefruit. Long bitterness on the palate.

10%ABV.  Imperial IPA. Poured out of the bottle a deep clear amber.  14ºSRM Nose is has nice clean citrus aromas of barely ripe Valencia oranges, kumquats and tangerines.  The brew also has a nice sweet malty aroma with a hint of yeasty funk.  There is a hint of boiling raw cane sugar richness to the nose as well. Mouthfeel is soapy.  There is is ponderous hoppy palate with fresh pine needles, grass and resin.   Carbonation is pronounced and necessary.  There are nice roasted malt, graham cracker, biscuit and lightly browned wheat toast flavors.  There is a nice nutty quality to the palate suggesting pecans and hazelnuts. Finish is medium with the hoppy bitterness predominating, some hyssop, but not aggressively so. Overall, was very impressed by the fact that the palat was so well balanced that the alcohol never really figured into the tasting. Goes on Favorites List!

330cl bottle, bottled 1/15/15, so drink before 1/15/16. Light amber, cloudy (a lot of sediment in bottle, could not get it clear), 1 finger of white head. Aroma: Sweet citrus (mainly sweet orange and mandarine), honey, dried fruits (peech, maybe some figs), sweet malts. More malty than hoppy, but very sweet and pleasant. Taste: Medium sweet, medium bitter, nicely balanced. Biscuity malt, citrus (sweet orange juice), resiny bitterness. Palate: medium body, low cabonation, nicely hidden alcohol, very drinkable. Overall: At this point in time this beer is not enough hoppy to be an good IIPA, not enough malty though to be good american barley wine. But it’s still very tasty, very balanced beer, incredibly drinkable, and I definitly could get a lot of this (and get totally drunk before i’ll knew it with this abv).

330 ml bottle into tulip glass, bottled on 5/13/2015. Pours moderate hazy/cloudy deep orange/copper color with a 1 finger dense off white head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings around the glass. Aromas of grapefruit, tangerine, pineapple, peach, apple, mango, lemon zest, orange peel, pine, honey, caramel, brown sugar, toasted bread, herbal, and floral/grassy earthiness. Very nice aromas with good balance and complexity of citrus/tropical/earthy hops, fruity yeast, and moderate dark/bready malt notes; with good strength. Taste of big grapefruit, tangerine, pineapple, peach, apple, mango, lemon zest, orange peel, pine, honey, caramel, brown sugar, toasted bread, herbal, and floral/grassy earthiness. Moderate amount of pine/citrus rind bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, peach, lemon/orange peel, pine, caramel, toasted bread, and herbal/floral/grassy earthiness on the finish for a good bit. Damn nice robustness, complexity, and balance of citrus/tropical/earthy hops, fruity yeast, and moderate dark/bready malt flavors; with a great malt/bitterness balance and zero cloying flavors after the finish. Fair amount of dryness from bitterness as well. Medium carbonation and body; with a very smooth, moderately sticky, and lightly creamy mouthfeel that is nice. Alcohol is very well hidden with only a slight warmth lingering after the finish. Overall this is a damn nice DIPA style. All around great complexity, robustness, and balance of citrus/tropical/earthy hops, fruity yeast, and dark/bready malt flavors; and very smooth and easy to drink for the ABV. A very enjoyable offering.

Bottle 330ml. Slightly hazy orange color. Small size, bubbly white head, stays. Nose is Fruity, citrus (fresh hop), yeast, mild pine. Medium to full body with light carbonation. Taste Is straight forward bitter, malty, bready, citrus and has a strong yeast character. Aftertaste is mainly bitter with a strong yeast accent. (Bottle) Cloudy amber with thin white head. Pleasant fruity aroma with hints of biscuit. Medium body with excellent soft carbonation. Very tasty and nicely balanced. There’s plenty of fruit notes, both sweet and tangy, at the start which give way to some light toffee malt and a steadily gathering spiciness and hoppy bitterness for a crisp but not aggressive long finish. Great taste - I kept having to sample it again - there’s quite some complexity in that well balanced profile. Excellent beer.
