The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle at the 7th Tasting in Belgrade-Serbia. Pours extremely cloudy orange skin, white gassy head. Nose: grassy, hops, lavender, tangerine. Mouth: watery (a lot), tangerine, sweet juicy orange, thin body.

Pours rather deep gold with white head. Aromas are piney hops, sweet. Seems light when you first get it in your mouth, but gradually swells to a full bodied, balanced bitterness beer with a nice long finish. Maybe a little light for an imperial ipa, but altogether enjoyable.

Couleur ambrée légèrement trouble, aucune mousse. Nez très houblonné fruits tropicaux. Gout bien amer fruits tropicaux, malt, zeste d’agrumes, avec fin de bouche longue et amère fruité et thé vert. Bien!

Bottle from Capitol Beer in Sacramento, CA. Pours a coppery gold with a foamy/creamy off-white head. Aroma seems mixed citrus, fruit and pine. Strong,but not biting. Med + body. Flavor is strong, and a rather unusual fruit leads off. Making me think of plum. It’s pretty dry, and has a persistent bitterness, but the fruit suggests otherwise. Not really understanding the malt - it has to be there to hold the hop, but I’m conflating hop and malt bitterness I think. Very different and quite tasty.

Hoppy citrus well balanced. Bitterness lingers on back of tongue but not too strong. Hazy caramel colour. Thin head remains. Pleasant aroma. Excellent beer.

Aroma of malt, some caramel, orange, Saison-ish yeast, apricots, hint of pine, tropical fruity notes, hops. Flavour is moderate sweet and faintly tart with a moderate to medium bitter finish. Has a Belgian thing going on. Not the most extreme DIPA, but it does have a depth to it.

On tap at Nakameguro Taproom many times in 2014. Orange color with a modest white head. Fairly nice lacing. Well-balanced aroma with caramelly malts and citrusy hops with hints of peach, apricot and toffee present as well. Starts off sweet with a lingering bitterness. Caramel and butterscotch with the resiny hops on the tastes. Really well-balanced. Very enjoyable IPA.

Cloudy orange pour with a fluffy lasting white head. Lacing coats the glass. Aroma is overripe peach, citrus, earth, and toffee. Taste is a little on the sweet side with more overripe fruits, earth, citrus zest, and caramel with a hint of dates. Finishes dry. Really interesting IPA.

bottle@ Gambrinus, Tartu. Pours orange with small yellowish head, disappears quickly. Aroma is malty, sweet, apples, fruits, citrus.Taste is bitter and sweet, bit watery at first, slight citrus, malty, aftertaste is weakly bitter and sweet, some spicyness.Medium body, and medium carbonation. Not bad for a japanese.
