The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

In short: malty IPA.
Pours cloudy amber with some off white head. Short head retention, some lacing. Malty, grassy, herbal aromas. Medium body, average carbonation, some oily texture. Taste is quite malty, sweet,caramel, some herbal notes, light bitterness, and maybe light body for its ABV.

On tap at Beer Temple. Hazy golden colour, white head. Aroma of dusty malts, bread, quite sweet, not much hop left, smells old. Flavour is sweet, malty, bready, decent grassy and pine bitter finish, but not much. Over the hill, now it’s just a decent Belgian ale. Medium-bodied.

Poured from 360mL bottle. Hazy, orangey yellow with full white head. Dominant citrus hops with mild tropical hops and caramel malt. Taste same with lots of grapefruit, sweet citrusy finish.

Bottle, courtesy of the great Jimthechap. This is an amazing beer that I would have missed had it not been for my friend’s generosity after an interesting post-mortem on a bluff Orpington. But to the beer, which pours murky amber, truly amber, and very cloudy, with a thin white head that dissipates into a feeble film of cream. Lovely appearance. The first whiff is lychees and grapes, but soon the aroma turns maltier, with the sweetness of dried stone fruits. Taste is powerful, with pine needles, eucalyptus essence, a tremendous amount of sweet malts, nectarines, apricots, some grassy bitterness, but not too overwhelming, and a long finish where the gum tree sap is the most lasting memory. The beer is resinous on the palate. Thanks Jono, this is a very interesting concoction, a great take on the old world IPAs, I suppose. No less than a delight. Suruga Bay. On a different life, I have contemplated the blue waters of Suruga Bay dozens of times from my trains to and from Shizuoka. It is only now that I realise the name does come across as a “frightful” anagram of Suruba Gay.

Orange/yellow body with white head some lacing. Hoppy citrus aroma. Taste is also semi bitter but this also has kind of a tart farmhouse saison thing going on, too. Some sweet juicy malts, as well. Nice beer from Japan.

Keg at Hoppy Loft, 6th October 14. Straw coloured, murky IPA. The aroma is nicely hopped and it drinks well. Pretty good
