The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Tap at Bashamichi Taproom, Yokohama. Hazy dark ordange colour with a white head. Aroma is fruity, hops, citrus. Flavour is heavy hops, citrus, some fruitiness.

Pours hazy amber with white head. Aroma of citrus, ananas and grapes. Taste is dry with citrus and grass. A bit week in the bitterness in the finishbut overall a nice beer.

Vignale (3271) - Malmö, SWEDEN - APR 2, 2013
Drucken på fat på Bishop Gustav. Viss rervation då jag fick det sista i fatet. Mörkt gyllengul, disig vätska, vitt skum. Trött och murrig doft, gissar att det påverkades av att jag fick sista slatten. Smaken är inte heller den särskilt stor. Men ren och med tydlig citruskaraktär. Sötman är måttlig och efterhand blir smaken allt stramare och torrare och den krispiga citrusbeskan i eftersmaken är ölets största kvalité. Bra, men inte mer.

Bottle from Systembolaget. Hazy orange/amber with a white lingering head. Aroma is sweet pineapple, citrus, pine, malt, notes of alcohol. Medium bodied, smooth mouthfeel, the bitterness is soft and leaves a fresh dry lingering feeling in the mouth. Quite sweet.

Fat. Mörkorange, lätt dimmig, med vitt skum. Doftar som en hel disk fylld av exotiska frukter, där ananas är absolut dominant. Melon, grape och citron kommer inte långt efter. Man anar inte beskan där som komma skall i smaken. Den slår till. Njutbart. Ananas är även här framträdande, också tallbarr och kåda och grape fyller på. En väldigt trevlig bekantskap.

Bottle - Amber with a slight haze. Pineapple, lychees, grapefruit and passion fruit all feature in the enticing aroma. Hoppy, tangy and slightly sweet taste with notes of malt, grapefruit and apricot standing out.

UPDATED: NOV 27, 2013 11/26/13 Tap at Birrera Bubble Craft, Osaka. Aroma: Floral hop, orange, dominant aroma of apricot, pine hop Flavor: Floral, orange, orange peel, apricot, pine hop and finishes with a long but moderate bittering. Comment: Best pint of this yet. I’ve probably underrated this in the past. Superb balance of citrus and stone fruit flavors, bittering hop, body and alcohol. Less in your face than the big West Coast style, this could be the poster beer for balanced Imperial IPAs. Notes from 11/2011 (Scored 39 on this occasion). Aroma: earthy malt, citrus hop Palate: big but balanced Flavor: earthy malt and citrus like the aroma. Very long, sustained finish. Comment: One of my favorite, ever-reliable Baird beers. Chris said this one had 6 additions of hop and 2 dry hop additions.

UPDATED: NOV 17, 2015 Arancio carico con saponosa schiuma bianca. Aroma con fantastici sentori di pompelmo ed erba fresca, penetranti ed incisivi; gusto amaro con note agrumate, finale asciutto, amarissimo e corroborante. Corpo medio-abbondante, struttura "spessa" ma non liquorosa. Fantastica IPA da riprovare al più presto!

On tap at Craft Beer Base. Muddy orange, thin white head. Pine resin, hoppy nose, just enough sweetness to balance out the bitterness. Super smooth and velvety in the mouth, with an excellent richness and fullness. No wonder this gets rave reviews. Had me hooked from the first sip, and only got better and better. Clean finish, very satisfying.

UPDATED: DEC 26, 2013 Free half-pint from CBB, congratulations on hitting 500 facebook likes! It poured a very cloudy gold with a fluffy white head. The aroma was quite piney which was matched by the flavor. It had a crisp dry finish with a lingering hoppyness. It was very well-balanced and not super-hoppy. I thought it was quite good and was surprised to find out it’s 7.5% the alcohol isn’t noticeable at all. ----dec 2013---- 7.5% part of the 800 yen sampler at Numazu Taproom, a cloudy yellow pour with a filmy head. The nose is a great juicy hop bomb, fruity & floral-apricots, grapefruit... The taste is well balanced, the malts support the hops well & allow them to reveal a whole host of citrusy goodness. It has a nice smooth full mouthfeel & a crisp cutting bitterness which disappears quick but leaves you wanting more-top knotch stuff! A bit too astringent for my taste but really good.
