The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle (36 cl) from Ölbutikken, Copenhagen, Denmark. Cloudy orange with some floaters, medium tan head. Floral and fruity hop aroma. Medium bodied, soft carbonation. Fairly dry, medium bitterness.

Hazy orange-yellow with a small, creamy, white head on top. Aroma is fresh, lots of lovley fruity hops. Citric, grapefruit, red apple, peach and apricot. Low carbonation, dry and creamy palate. Flavour is elegant, bitter yet malty balanced. Caramel malts with a doughy undertone in the back, exotic fruit notes in the front. Apricot is especially apparent. Lightly warming. Good.

Bottle. Hazy orange with a small white head. Sweet aroma with hops and fruit. The taste was hoppy with a good bitterness. Dry and hoppy finish. Descent beer but not the best DIPA out there, something was missing.

Pours orange with a medium sticky head. Aroma has notes of exotic fruits and hops. Taste is quite sweet and bitter, filled with exotic fruits and malts. Smooth finish with some sticky notes. Quite exotic and complex IIPA.

Bottle at home. Hazy orange coloured with a medium sized off-white head. Fruity aroma of hops and pine needles with notes of citrus and exotic fruits. Fruity flavour of hops, grass and grape fruits with notes of pine needles. Dry hoppy finish.

Bottle at home. Pours a hazu amber with a small off-white head. Dry with a hoppy sweetness. Lots of floral hops aromas nicely balanced with the bitterness. Also tiny earthy hints. Medium to full bodied. Medium carbonation. Quite dry finish with more hops. Very good.

On tap at the Baird Harajuku taproon. Cloudy orange, fine head with excellent lacing. Flowery hops, pine resin, eucalyptus and a hint of caramel in the nose. Mango, passionfruit and toffee on the tongue. Incredibly creamy and smooth body. Sweeter and less bitter than your average 2IPA.

Bottle. Light amber, cloudy, very small and fully diminishing head. Moderate, malty and caramel sweetish aroma, lots of fruitiness, some piney and grapefruit hoppyness. Body is medium to full, malty and sweetish fruity flavor, piney and grapefruit hoppyness, caramel. Finish is average, malty and sweetish, fruitiness with piney hoppyness, some caramel and faint alcohol. Caramel sweetish and fruity IIPA – too sweet and fruity for me/could use more hoppyness.

Pours light copper with a white head. Nose has pineapple, oranges, caramel, nice hoppy, nice maltiness. Taste is nice bitter, hoppy, fruity, slightly spicy, quite some malts, slightly cooked vegetables.
