The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Hoppy aroma has exotic fruits, peach and mango. Palate is watery and flavour disappears rather quickly. Hoppy flavour has hints of metal. Needs more malt! I wonder if the japanese way to tax the malt amount in beer is reason for this?

Pours a hazy orange colour with a small, white, foamy head. Aroma of floral hops, caramel and some pine needles. Flavour of floral hops, caramel, pine needles, mild bready malts and some citrus. Quite light bodied with a slightly watery but alcohol-driven finish. Needs a heavier body.

Bottle 360 ml, pours dark golden with small white head..... the aroma is pineapple, citrus, lots of flowers.... and the flavor is very hoppy with flower notes.... dry citrus finish.....

Bottle. Pours unclear orange with a medium white head. The aroma is highly fruity with notes of flowers, citrus and caramel. The flavour is pine, light peach, mango, citrus and caramel. Long hoppy fruity finish.

Lovely inviting nose which is reminiscent of white wine, resiny hops and a huge amount of mandarin orange. Good bitterness. Great balance. Mandarin orange being very present again in the taste. Dry finish which makes you eager to take another sip. A delicious, subtle double IPA with plenty of character.

Bottle (36 cl) from Ölbutikken, Copenhagen, Denmark. Cloudy orange with some floaters, medium tan head. Floral and fruity hop aroma. Medium bodied, soft carbonation. Fairly dry, medium bitterness.

Hazy orange-yellow with a small, creamy, white head on top. Aroma is fresh, lots of lovley fruity hops. Citric, grapefruit, red apple, peach and apricot. Low carbonation, dry and creamy palate. Flavour is elegant, bitter yet malty balanced. Caramel malts with a doughy undertone in the back, exotic fruit notes in the front. Apricot is especially apparent. Lightly warming. Good.

Bottle. Hazy orange with a small white head. Sweet aroma with hops and fruit. The taste was hoppy with a good bitterness. Dry and hoppy finish. Descent beer but not the best DIPA out there, something was missing.

Pours orange with a medium sticky head. Aroma has notes of exotic fruits and hops. Taste is quite sweet and bitter, filled with exotic fruits and malts. Smooth finish with some sticky notes. Quite exotic and complex IIPA.

Bottle at home. Hazy orange coloured with a medium sized off-white head. Fruity aroma of hops and pine needles with notes of citrus and exotic fruits. Fruity flavour of hops, grass and grape fruits with notes of pine needles. Dry hoppy finish.
