The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Pours a murky amber gold, with a big rocky, lasting head. Huge caramel, pineapple and sharp piney, resinous hops on the nose. Luscious sweet apricot, tropical fruit malt in the flavour, followed by more bright hop background. Far towards my favoured sweet end of the American style IPA spectrum. Excellently balanced. Soft carbonation, slightly slick mouthfeel, Mellow in the medium dry, medium long, medium bitter finish. Lovely.

Phone says +9 but that ainít how it is in the river valley. Had to wait out some stoners to drink the beer I opened 45 mins ago. Body is mostly frozen and a vigorous run up and down the stairs did nothing. Almost midnight - nice night to be out. Phone up to glass tells me this is hazy and yellow gold which is strange. Sediment. The stars are bright when the wispy clouds spread out. Refreshing aroma - heavily citrused, floral strength, sweet orange and lemon, honeydew melon, candy lime. Pretty cool smell! Taste is similar with some peach, creamy fruit, a sharpness that hangs around and might trick me into thinking a light spice of unknown origins, wonderfully balanced bitterness, mostly unsweetened grapefruit. Mithfeel is vert intetdyjnh. I am freezing big time. Time to ride home. Ecxellent brew.

It looks like a WeiŖen, bit isnít! Donít let the pale hazy yellow looks fool you.† Nose is not very prevalent, but taste makes more than up for it. Hints of apricot, orange, with some rice puffs (sorachi?) and loads of hop, which linger and linger... Some saison. Original take on the genre, not as toffee-like as many IIPAs are.

Bottle, 36cl. It pours an almost clear golden-orange body with a small, lasting, off-white head. Citrus peel, some peaches and some malty sweetness in the aroma. The flavor has some sweetness in the back, with caramel hints, fruityness and bitterness. Full body, mostly bitter finish, with a pleasant fruityness. Certainly a nice one. Bet it would be even better when completely fresh. 120302

A-- Poured a dark honey color. Head started off at two fingers and finally settled down to a little under one finger. Off white colored head. Lots of sticky web like lacing. Good head retention and a well put together head for the beer. Just a little bit of carbonation bubbles at the base of the beer. S-- Honey, grapefruit, citrus, carmel, and some pine. Honey, grapefruit and the carmel stand out the most. T-- Once again honey, grapefruit and carmel are the dominant tastes. Pretty decently balanced between the grapefruit and carmel. Both are fairly reserved though. Not an in your face Imperial IPA. M-- Finishes very dry. The flavor does not last too long in the mouth. That would be the honey. Does not stay in your mouth and leave a real impression like others in this style. Missing that pine feel in the mouth when finishing. Medium to lower end of carbonation D-- not too bad
