The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

UPDATED: NOV 27, 2013 11/26/13 Tap at Birrera Bubble Craft, Osaka. Aroma: Floral hop, orange, dominant aroma of apricot, pine hop Flavor: Floral, orange, orange peel, apricot, pine hop and finishes with a long but moderate bittering. Comment: Best pint of this yet. Iíve probably underrated this in the past. Superb balance of citrus and stone fruit flavors, bittering hop, body and alcohol. Less in your face than the big West Coast style, this could be the poster beer for balanced Imperial IPAs. Notes from 11/2011 (Scored 39 on this occasion). Aroma: earthy malt, citrus hop Palate: big but balanced Flavor: earthy malt and citrus like the aroma. Very long, sustained finish. Comment: One of my favorite, ever-reliable Baird beers. Chris said this one had 6 additions of hop and 2 dry hop additions.

UPDATED: NOV 17, 2015 Arancio carico con saponosa schiuma bianca. Aroma con fantastici sentori di pompelmo ed erba fresca, penetranti ed incisivi; gusto amaro con note agrumate, finale asciutto, amarissimo e corroborante. Corpo medio-abbondante, struttura "spessa" ma non liquorosa. Fantastica IPA da riprovare al piý presto!

On tap at Craft Beer Base. Muddy orange, thin white head. Pine resin, hoppy nose, just enough sweetness to balance out the bitterness. Super smooth and velvety in the mouth, with an excellent richness and fullness. No wonder this gets rave reviews. Had me hooked from the first sip, and only got better and better. Clean finish, very satisfying.

UPDATED: DEC 26, 2013 Free half-pint from CBB, congratulations on hitting 500 facebook likes! It poured a very cloudy gold with a fluffy white head. The aroma was quite piney which was matched by the flavor. It had a crisp dry finish with a lingering hoppyness. It was very well-balanced and not super-hoppy. I thought it was quite good and was surprised to find out itís 7.5% the alcohol isnít noticeable at all. ----dec 2013---- 7.5% part of the 800 yen sampler at Numazu Taproom, a cloudy yellow pour with a filmy head. The nose is a great juicy hop bomb, fruity & floral-apricots, grapefruit... The taste is well balanced, the malts support the hops well & allow them to reveal a whole host of citrusy goodness. It has a nice smooth full mouthfeel & a crisp cutting bitterness which disappears quick but leaves you wanting more-top knotch stuff! A bit too astringent for my taste but really good.

Tasted off tap at the Great New Zealand Beer Festival. Golden amber colour with a film of head - gas flow did not do it any favours. The scents of lush fruitiness - golden plums, apricot, locquot and grapefruit, we truly lovely. The flavour had grapefruit sourness, but gratifyingly so and along came mellow tropical fruits. There was a kiss of bitterness and inviting citrus peel and then... and then... oh bugger, it was all gone. Another time perhaps.

A lightly hazed orange colored beer with a small, short lived off white head. Lovely hop scent, reminiscent of Stone IPA, yea....it smells that damned good! Tastes just as good with a thick, chewy, orange blossom honey & cookie dough malt initial hit, quickly followed by massive industrial hops. Under this is a complex, tangy, lambic like flavor. Make no mistake about it, this is one well constructed beer and just might have moved into my "Favorite Japanese Beer" position! To top it off, I met two gorgeous young ladies at the brewpub!

Pours a murky orangish copper with a off white frothy head that leaves ample lacing. Aroma of citrus, biscuit, sweet malts and mandarin orange. Taste is citrus hops and bready sweet malts mixed with a good balance of malts and hops. Overall a great ipa that seems medium bodied & full flavor.

Bottled 28/12/12. A hazy gonger coloured beer with a wisp of off-white head. Good strong hops throughout with over sweet malts in the nose. Not the freshest which doesnít help but the flavours are tight. The sweetness is less bothersome in the mouth where the hops come through really nice. A good beer.

Draft - Lots of citrus and sweetness on the nose, like cotton candy. Cloudy orange with no head. Orange rind and resin dominate the palate, with an oily mouthfeel.

Draft. Medium off-white head with nice lacing, atop murky amber body. Aroma is moderately sweet, pineapple, some orange, light bread. Taste is moderately sweet, grapefruit, some pineapple, light orange. Medium-full body, some resin.
