The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Tasted off tap at the Great New Zealand Beer Festival. Golden amber colour with a film of head - gas flow did not do it any favours. The scents of lush fruitiness - golden plums, apricot, locquot and grapefruit, we truly lovely. The flavour had grapefruit sourness, but gratifyingly so and along came mellow tropical fruits. There was a kiss of bitterness and inviting citrus peel and then... and then... oh bugger, it was all gone. Another time perhaps.

A lightly hazed orange colored beer with a small, short lived off white head. Lovely hop scent, reminiscent of Stone IPA, yea....it smells that damned good! Tastes just as good with a thick, chewy, orange blossom honey & cookie dough malt initial hit, quickly followed by massive industrial hops. Under this is a complex, tangy, lambic like flavor. Make no mistake about it, this is one well constructed beer and just might have moved into my "Favorite Japanese Beer" position! To top it off, I met two gorgeous young ladies at the brewpub!

Pours a murky orangish copper with a off white frothy head that leaves ample lacing. Aroma of citrus, biscuit, sweet malts and mandarin orange. Taste is citrus hops and bready sweet malts mixed with a good balance of malts and hops. Overall a great ipa that seems medium bodied & full flavor.

Bottled 28/12/12. A hazy gonger coloured beer with a wisp of off-white head. Good strong hops throughout with over sweet malts in the nose. Not the freshest which doesn’t help but the flavours are tight. The sweetness is less bothersome in the mouth where the hops come through really nice. A good beer.

Draft - Lots of citrus and sweetness on the nose, like cotton candy. Cloudy orange with no head. Orange rind and resin dominate the palate, with an oily mouthfeel.

Draft. Medium off-white head with nice lacing, atop murky amber body. Aroma is moderately sweet, pineapple, some orange, light bread. Taste is moderately sweet, grapefruit, some pineapple, light orange. Medium-full body, some resin.

Bottle bought at Tanakaya Liquor store in Tokyo, Japan. A golden/amber coloured pour with a medium white head on top. Hoppy, fruity, sweet aroma. Tastes fruity, hoppy, bitter and slightly sweet, some caramel too. Nice complexity in this DIPA. Probably the best Japanese beer that I’ve ever had. Good stuff.

Pours a murky amber gold, with a big rocky, lasting head. Huge caramel, pineapple and sharp piney, resinous hops on the nose. Luscious sweet apricot, tropical fruit malt in the flavour, followed by more bright hop background. Far towards my favoured sweet end of the American style IPA spectrum. Excellently balanced. Soft carbonation, slightly slick mouthfeel, Mellow in the medium dry, medium long, medium bitter finish. Lovely.

Bottled. Hazy deep golden, rich creamy head. Salty and fruity with caramel and grapefruit. Sweet with medium-full body and well rounded mouthfeel. Doughy with salty grapefruity bitter finish.

Bottle 36 cl. Pours hazy orange in color with off-white head. Pine and some fruits in aroma. Booze, bitter and some tropical fruits in taste.
