The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle from BrewDog website. Cloudy orange-amber coloured with strong bitter orange marmalade flavours, toffee notes and a bitter-sweet fruity finish. A fantasic American style Imperial IPA!

A-- Poured a dark honey color. Head started off at two fingers and finally settled down to a little under one finger. Off white colored head. Lots of sticky web like lacing. Good head retention and a well put together head for the beer. Just a little bit of carbonation bubbles at the base of the beer. S-- Honey, grapefruit, citrus, carmel, and some pine. Honey, grapefruit and the carmel stand out the most. T-- Once again honey, grapefruit and carmel are the dominant tastes. Pretty decently balanced between the grapefruit and carmel. Both are fairly reserved though. Not an in your face Imperial IPA. M-- Finishes very dry. The flavor does not last too long in the mouth. That would be the honey. Does not stay in your mouth and leave a real impression like others in this style. Missing that pine feel in the mouth when finishing. Medium to lower end of carbonation D-- not too bad

Bottle. Deep golden colour with an off-white head. Aroma is peaches, malt, hop, pine, grapefruit. Flavour is peaches, malt, hop, pine, grapefruit. medium body. Nice beer.

Tap at the Copenhagen Beer Celebration 2012. Pours cloudy gold with a fine, white foam head. Very spicy and herbal. Medium sweet, lightly dry. Medium bodied with fine carbonation. Reasonably sweet with a bit of hop kick in the end. Nice DIPA.

CBC. Tap, 110512. Amber with white head. Aroma of grapefruit and malt. Flavour with caramel, fruit and spices.

0.36l bottle shared with The Tasting Crew. This is a blurry glowing orange-honey colored beer with a small bubbly, lacing off-white head. The aroma is fruity and caramel sweet with passion fruits, strawberries, sticky caramel and some citrus. Itís average carbonated with a slick texture. Flavors are hoppy and caramel sweet. Almost a bit pungent, but not in a matter that itís to disturbing. Some ripe citrus fruits going on here as well before it ends in a light dry tongue. An OK DIPA. 16.06.2012

Bottle, shared with BBGTC. Pours a clear orange body with a big creamy head. Nice. Aroma is caramel, malts, syrupy hops, hints of honey melon and citrus. Taste is bitter grassy hops, grapefruit, melon, hints of peaches and resin. The mouthfeel is good; soft and creamy. Despite this, the overall impression Iím left with is that this is not too balanced, somehow. Or exciting, for that matter. Decent enough, though.

0.36 l bottle, thanks Johannes! Hazy yellow brown color. Sweet citrusy aroma with lemon, passionfruit, nuts and hint of sweat. Bittersweet and tart citrusy flavor with some nuttiness, mango, apricot and some yeastiness. Full bodied. A bit heavy on a palate, but not bad.
