COMMERCIAL DESCRIPTION
The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle 36 cl tasted @ Karhisma Birroteca (Piedimonte Matese, Caserta - Italy). Cloudy orange with golden reflexes, topped with a not so persistent white head. Caramel and fruit aroma, grapefruit, orange and apricot (so intense) especially. Medium body, moderately carbonated, flavor mainly of malt, caramel, nuts, some of the peach part around the stone. Loads of citrus and grapefruit that leads to an harsh and dry finish. Really balanced in the end, but maybe less solid than a classic DIPA.

From a bottle. Very good IPA style beer. Nothing special, but very good... not sure I’d rate it up there with the better Double IPAs... more like a very good IPA.

360mL bottle, pours an opaque amber orange with a tiny white head. Aroma of citrus hops, mandarin orange and caramel malt. Flavour of spicy, citrusy hops, with some floral notes, caramel malt backing and some slight tropical fruits. Definitely an improvement over Teikoku, though nothing outstanding.

Bottle. Pours a hazy medium amber (bit of orange tinge) with a thin white (tinge of green) head (bottle fermented). Aroma - hops, floral, citrus. Taste: Very hoppy - lots of citrus - lots of bitterness - not much for malt underneath - but very flavorful in the hop realm. Finishes with a grassy hop bitterness. Warming mouthfeel... very good. Probably the best beer out of Japan that I’ve ever had...

360ml bottle from 16th St. Liquor in West Vancouver. Pours a murky amber with off white head that reduces quickly to a faint ring. Aroma is powerfully floral with some hint of spice. Flavour is potent citric hop bitterness. Very floral and complex. Malt is there but underplayed. Good lingering bitter finish. While a solid IPA I’d nt classify it as a double. 7.5% just seems to be the tipping point between single and double and this beer doesn’t quite make the jump.

Bottle at Jan & Charlotte’s, Ulfborg, Denmark, 08.04.11 thanks Jan & Charlotte for this. Hazy orange/amber colour with a large bubbly white head. Really fresh hoppy nose, quite zingy. This is really good stuff, could be the beer of the evening. A8 A3 T8 P4 Ov16 3.9
