The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Small off-white head with lots of big bubbles. Slightly cloudy golden-amber. Aroma has some lemon and toffee not particularly fragrant. Light malt taste with some yeasty funk, lemon pith. Round short dry finish. Watery oily palate with an extra bitter twist at the very end that leaves my mouth tingling. I think I should love this beer, but maybe it has travelled too far... I’m still please it did.

Medium offwhite head. Amber body with lots of little particles. Deep resiny tropical fruit aroma with minty earthy wooden notes. Dry-sweet resiny strawy tropical fruit taste with spicy minty notes. Fullish body. Mild, soft, smooth mouthfeel. Dry sugary lacquer and teak aftertaste with mango, strawberry, and grain notes. Spicy wooden straw notes linger for a long time. Amazing. Incredibly drinkable and almost too much flavour, yet amazingly well contained. (0.355l bottle, Fish & Beer, Copenhagen.)

(36 cl bottle from Toft Vin) Pours a clear copper with little, white head that laces the glass and small traces of yeast at the bottom. Floral, hoppy aroma - a bit subdued in character. Front-loaded with quite a hoppy bite of complex bitterness in the beginning. Extremely dry, drawn out finish. Oily texture and full bodied on the palate although with less hop complexity than other brews of the same kind (BB date: Oct 2012). Softly carbonated. A worthwhile imperial IPA if you happen to be in Japan I imagine.

Bottled. Aroma has citrus. Hazy, orange, Offwhite head. Taste is bitter, very citric, hint of caramel. Medium bodied. Nice.

Botella heima. Cloudy nice orange colour with a huge white head, fairly well lasting, ok lacing. Very hoppy aroma indeed, ripe fruit and pine along with citrus and some resin. Good filling mouthfeel. Flavour has lots of hoppiness, very fruity with pine and citrus, flowery, sweet like, dry and pleasantly bitter. Dry well lasting fruity pine flowery hoppy finish. Sugeee oyshii!

Bottle. Creamy white good mostly lasting head. Moderate malty and heavy hoppy aroma. Flowers and coconut notes. Heavy bitter not very balanced flavor. Average moderate bitter finish. Creamy palate. Messy beer.

UPDATED: OCT 3, 2011 Una delle migliori birre che ho bevuto ultimamente!!!Non è il solito maltone! Bilanciatissima e con un bel luppolo! La trovo una birra di grande beva nonostane una gradazione alcolica piuttosto alta. Spero che sarà presto disponibile in keykeg in quantità maggiori.

Hoppy aroma has exotic fruits, peach and mango. Palate is watery and flavour disappears rather quickly. Hoppy flavour has hints of metal. Needs more malt! I wonder if the japanese way to tax the malt amount in beer is reason for this?

Pours a hazy orange colour with a small, white, foamy head. Aroma of floral hops, caramel and some pine needles. Flavour of floral hops, caramel, pine needles, mild bready malts and some citrus. Quite light bodied with a slightly watery but alcohol-driven finish. Needs a heavier body.
