The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

On tap. Pours a cloudy orange color with a medium creamy white head. Long lasting foam. Aroma is huge hops, floral with big pineapple and peach notes. Taste il fruity and fresh. Bitter from middle to the end. Good body and carb. This was maybe a bit too light as an "imperial" IPA, but it was balanced and tasty as few. Simply delicious.

Bottle @ Brewdog Glasgow. Hazy orange colour, thin off-white head. Nose is light pine and fruits, some grapefruits. Sweet and flowery. Flaovur is light pine, fruits, bit flowery. Well balanced.

UPDATED: APR 6, 2012 Bottle @ BrewDog Glasgow. Resin hop aroma. Cloudy amber brown colour, reasonable head. Fruity hop flavour. Well balanced & smooth. A great double IPA.

From bottle. Not really fair to class this as a double ipa, it’s bot bitter enough or hoppy enough. Pours golden with white head. Hoppy, fruity aroma, I could smell this all day. Taste is massive orange/mandarin note, caramel malt backbone (mild) but the hops are delicious, so juicy, fruity, tasty. Mild bitterness. Soooo tasty.

Bottle. Pours a murky orange with an off-white/khaki head. Bit of lacing. Sweet, tart malty aroma with citrus and pine hops. Nice. Slight old hops/cheese-note, but it’s okay. Same flavour, pretty much. Remote metallic note. Finish is tart and bitter with a lingering apple note. Soft palate, quite nice. Overall not very complex, but well-made and pretty tasty. A bit cloying in the long run maybe though. 05.11.11.

Keg at Harajuku taproom. Pale cloudy yellow colour with small white bubbly head. Aroma is ultra fruity, pineapple, grapefruit and a bit of pine hops. Spiky in mouth. Taste is very fruity then you get lots of bitterness which fades into an almost sweet boozy finish. Great beer!

Bottle at Beer Temple. Nice dark amber with slight head. Nose is fruity, hoppy and with pines. Very correct. Really nice presentation. Taste is also lots of caramel and hops and pines. Nice dry finish.

Bottle 33cl from Alvinne beershop. BB 10-2012. Cuivre et blanche. Arôme houblonné, fruité tropical, léger pointe malt, sucré avec pelure de fruit (pamplemousse). En bouche, profile houblonné très agréable, léger malt caramel, fruits tropicaux; pamplemousse, mangue et papaye et aspect de feuille de thé vert. Palais reste épais avec petite pointe de tabac.

Pours hazy dark amber with a large, fading head. Nose shows big fruity hops, with lemon, orange blossom, apricot and grapefruit quite noticeable, along with some pine. Underneath is lots of sweet caramel. Flavours are very malty, lots of caramel and sweet clean malt. Also a lot of resinous pine, but with little of the aforementioned fruit transferring through. Body is a little too syrupy.

360ml bottle. Slightly cloudy and golden in colour. Grapefruity and piny on the nose. Medium bitterness with a mild sweetness balancing the flavours. Slightly oily with a medium body.
