The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle. Pours a nice copper, orange color with a frothy white head. Aroma is of your traditional west coast IPA, lots of grapefruit, sweeter citrus fruits like tangerine and orange, some sweet malts in there too. Flavor is also fairly hoppy, with alot of grapefruit, some orange, herbal notes, a spicy hop and the sweet malts. The body is medium with a slightly dry mouthfeel. Overall a pretty nice, well balanced DIPA.

Draft. Amber beer with a cream colored head. Summer fruit aroma. Summer fruit and light pine flavor. Medium bodied. Good bitterness. Summer fruit and light pine lingers with light malt.

Bottle. Golden, offwhite head. Fruity citrus aroma, floral, some grapefruit. Hoppy citrus flavor, grapes, grapefruit, grass. Fruity finish.

01-JUN-2011, bottle @home, from "Fish & Beer". Pours orange with lasting high almost white head. Very fruity nose with grape fruit. Quite some sweet malts to back up the dry hoppiness. Very very smooth and creamy with low carbonation. Really balanced and smooth. Sometimes I prefer something NOT balanced and smooth in an IIPA, but hey the qualities in this cannot be denied. Lovely:)

Thanks to jrocket for this. Pours a hazy golden yellow with a thin white head and good lacing. Aroma is piney hop but a little subdued and soft. Taste is a nice dry pine hop with slight resinous qualities. Good IPA but lacks the umph to make it an Impy.

Bottle. Hazy amber with medium off-white head. Flavour is malt, hops, bitter, fruit, pine and a little peach.

Bottle 36 cl tasted @ Karhisma Birroteca (Piedimonte Matese, Caserta - Italy). Cloudy orange with golden reflexes, topped with a not so persistent white head. Caramel and fruit aroma, grapefruit, orange and apricot (so intense) especially. Medium body, moderately carbonated, flavor mainly of malt, caramel, nuts, some of the peach part around the stone. Loads of citrus and grapefruit that leads to an harsh and dry finish. Really balanced in the end, but maybe less solid than a classic DIPA.

(360ml bottle) Pours a cloudy orange body with a medium off-white head. Aroma of grapefruit, nuts, caramel, bread, florals, orange, and light butterscotch. Flavor of grass, bread, nuts, and caramel malt with a lingering bitter finish.

From a bottle. Very good IPA style beer. Nothing special, but very good... not sure I’d rate it up there with the better Double IPAs... more like a very good IPA.
