The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Sample @ Copenhagen Beer Celebration. Pours hazy pale golden with a small creamy white head that is rather quick to dissipate while leaving lots of thick lacing on the glass. Smell is sweet and fruity with cereal, pineapple, mango, hay and plums. Taste is sweet, fruity and spicy with plums, pineapple, cloves, white pepper, crackers, cereal and subtle hints of barnyard. Mouthfeel is smooth, tiny watery and light to medium bodfied. Finish is sweet and bitter with orange zest, plums, cloves and hints of dry soil.

On tap at the Craft Beer Festa Kyoto 2012. Astounding citrusy, grapefruit aromas. A dusky orange beauty w/ a great head. Malty, thick, with a long piney aftertaste. Fresh, medium-full body, such a pleasure to drink. Can you say "West Coast"? Well, here’s a great one from the east coast of Japan.

Draft, rated stealthily while standing next to the brewer, while at Mikkeller bar. Hazy golden color, small white head, delicate kacing. Aroma of fresh pineape and grapefruit. Taste is bitter citrus, sourdough bread, light spice. Very nice.

360ml bottle. Heavy in the glass. Great deep copper color with a smooth even layer of sand coloured foam. The hops in the aroma pack a powerful punch and really set you up for what is to follow. Big strong mouthfeel with a smooth velvetness to it. Great flavour and all round great beer.

Bottle (360ml):
Hazy golden amber to orange with a foamy. Off-white head that is about a thumbs width tall and reduces to about one centimetre tall.
Lots of hops although not as strong as I have come to expect from DIPA’s. Some pine is interlaced through the hops and this is followed by some fruity orange and lemon aromas followed by some light grapefruit notes and a bitter citrus finish.
Pine hops and citrus mixed with some orange and grapefruit. I could also detect some mango in there and the finish is very bitter and full of pine hops again.
Medium, smooth and moderately carbonated with a huge amount of bitterness, although it is a DIPA so that is to be expected. It is a sort of sweet citrus feel to it with some sugar to boot.

A good beer and a nice one for my first Japanese IPA of any sort, it was pleasant to drink although still has to improve considerably to match some of the American IPA’s that are out there.

360ml bottle. Poured hazy amber with a frothy, lasting white head. Aroma has fresh hops, pine, tropical fruits, amarillo. Flavor has malt, bitter hops, fruitiness. Bitter, leathery, nutty finish. Mouthfeel is surprisingly thin, almost watery. High drinkability.

Light orange, hazy. Very hop resinous aroma. If you’ve rubbed hops between your fingers, or chewed on a hop pellet, you’ll know what I mean. A bit flowery, with some citrus and pine. I’m guessing a lot of amarillo in it. Palate is dry and lightish. Bitterness, some yeast residue. Ok, but the hops were all wrong. It’s like they’d captured the resinous-gummyness of hops instead of the aroma. Strange.

330ml bottle pours a light golden orange color with a 2 finger white head that settles down to some thin spotty lacing. Aroma is fantastic with pine and citrus and pale malts. Taste is dominated by citrus and piney hop bitterness balanced decently with some fruity and light malty sweetness. Medium bodied with abundant carbonation. This DIPA was surprisingly good and thoroughly enjoyed.
