The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Really liked this. Apricot early, particularly on the nose, before a very very well handled kick of hops charges through. Perfectly balanced and not at all rough. Very refreshing actually given the very dry structure. Excellent beer.

Bottle. Hazy orangeish amber pour with a fluffy white head that doesnít last very long. Nose is big and hoppy with notes of orange, grapefruit, apricot and caramel. Flavour is very similar but with a bit more malt backbone. Oily mouthfeel with fairly low carbonation and a long bitter finish. An exceptionally nice DIPA, very well balanced and easy to drink.

Bottle. Pours a slightly dirty amber with a creamy offwhite head. Huge hop aroma of mainly resiny pine pine. A little grapefruit and some caramel but it is pretty much just about the pine hops. Flavours are basically the same. Whilst there is a little caamel sweetness the hops dominate. Very bitter finish with huge resiny after taste. Slightly one dimensional but still a good beer all the same.

UPDATED: AUG 25, 2012 Awesome dark unfliterd orange pour with a big pillowy head. Nose is sunny citrus and pine. Medium bodied but a bit one dimensional in the mouth - just bitter resin and citrus. One of those close but no cigar type beers. A bit more depth and breadth in the flavour profile and this would be a contender. A bit more dryness to the body would really kick this in to the stratosphere!

On tap at Harajuku Taproom. Hazy amber. Intense grapefruity hop aroma. Very dry, yet with enough body and maltiness to provide enough backbone. A very good IPA.

Honey Orange pour misty medium head carbonation is medium aroma citrus floral malts flavour bitter of citrus peel apricot grapefruit hop taste caramel malt smoothness it needs it finish straight forward IMp ipa a bit boring bitter fruity and then not much to cheer about boring

Nice strong orange and toffee, with bready yeast, flowers, brown sugar. Candy. Wee bit of alcohol. Really intense flavours. Very sweet. Nice hop bitterness. Short sentences. Lots of oranges, lychees, tea, flavours. Very intense - I like this IIPA.

Golden with a white head. Aroma is full of fruit, pine, some citrus, and a nice light malt. Flavor is a bit one sided and could use a little more of that malt. Strong bitter pine and citrus that really burns the side of the tongue. Baird being Baird, I was expecting this to be too sweet but it turned out to be a very dry, crisp, clean imperial IPA. No misplaced sugars of sweet malts. I actually want a little more in the way of malt in this one. This is a mighty fine beer, though. Iíll be having more of this one.

UPDATED: MAY 15, 2012 Just knocked it up a few points because it is much better balances and more fragrant now than it was in the beginning. A lovely IIPA when fresh can stand up to just about anything.

Draught at Beer Works Osaka IPA Challenge= 3.8 (2009?) Light copper color. Big, fruity, piney, aroma, with menthol, citrus, big hops. Huge bitterness, with rather light malt. Citrus, menthol, orange in the flavor, not very sweet, not very malty. Paralyzingly bitter finish that lasts a long, long, time. Great, but canít drink much of it.
