The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle from GBBF, 2011. Drank at home. Cloudy orange pour with a white head. Tangerine, pineapple and mango aroma. Fruit filled flavours, particularly peach and apricot. Quite a citrus tang. Nice hoppy taste. Fruity-bitter finish. Good stuff.

36 cL bottle. Pours hazy orange with a small white head. Aroma is fruity, dense hoppy and dense grapefruity. Bitter, citrusy and solid grapefruity to pinewood hoppy. Dry, bold, bitter, solid hoppy and lingering dry fruity finish.

GBBF 2011. Bottle. An IPA zinging with grapefruit and citrous fruit. Nose is zest grapefruit. Taste is caramel malt and grapefruit. Itís big, itís bold but the grapefruit is fresh and light and not too resiny or heavy bodied. As good as any Californian IPA.

Tap @ Galbraithís. Hazy, brownish-gold pour with a persistent, short white head leaving scattered lace. Pine and peachy hop nose. Medium body and carbonation, with an initially slick mouth feel and a lightening of the body late.. Grapefruit, resin, biscuit, chocolate, tea, alcohol and roasted soy beans. Dry, bitter, short finish with some cheese.

Bottle. A clear pale to medium amber beer, with a large, frothy, mostly lasting white head. The aroma is lightly malty (toasted garin), moderately to heavily hoppy (apricot, grapefruit. lemon. pine), with a note of oranges. The flavor is moderately sweet, lightly to moderately acidic, lightly to moderately bitter. Medium body, slick texture, average carbonation, dry and long finish with moderate to heavy bitterness, lightly to modeartely alcoholic. One of the most clean IPA example iíve ever tasted. Bright hop aroma, not sticky/sugary, actually not so Imperial, but who cares? Clean bitterness for the style, and it tastes rather fresh, considering where it comes from. Iím glad this is now available in Italy.

Bottle someone brought to Acbf 2011. Hoppy as hell. Clear pale gold colour. Peach flavour is good then really lovely bitter pepper hop finish. Lovely hot pepper.

Small off-white head with lots of big bubbles. Slightly cloudy golden-amber. Aroma has some lemon and toffee not particularly fragrant. Light malt taste with some yeasty funk, lemon pith. Round short dry finish. Watery oily palate with an extra bitter twist at the very end that leaves my mouth tingling. I think I should love this beer, but maybe it has travelled too far... Iím still please it did.

Medium offwhite head. Amber body with lots of little particles. Deep resiny tropical fruit aroma with minty earthy wooden notes. Dry-sweet resiny strawy tropical fruit taste with spicy minty notes. Fullish body. Mild, soft, smooth mouthfeel. Dry sugary lacquer and teak aftertaste with mango, strawberry, and grain notes. Spicy wooden straw notes linger for a long time. Amazing. Incredibly drinkable and almost too much flavour, yet amazingly well contained. (0.355l bottle, Fish & Beer, Copenhagen.)

(36 cl bottle from Toft Vin) Pours a clear copper with little, white head that laces the glass and small traces of yeast at the bottom. Floral, hoppy aroma - a bit subdued in character. Front-loaded with quite a hoppy bite of complex bitterness in the beginning. Extremely dry, drawn out finish. Oily texture and full bodied on the palate although with less hop complexity than other brews of the same kind (BB date: Oct 2012). Softly carbonated. A worthwhile imperial IPA if you happen to be in Japan I imagine.
