The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

0,33L bottle (from Uba ja Humal, Tallinn), BB 28.05.2015, ABV 8.5%. Pours hazy amber with off-white head. The head stays for a moment. Aroma is sweet, tropical fruits, sugar, alcohol. Flavor is sweet and bitter, citrus, tropical fruits, grass, malt. Finish is dry bitter. Overall: alcohol is showing a little bit too much, but otherwise ok. I guess a fresher bottle would be better.

Golden colour, firm white head. Aroma of hops. Citrus, tropical fruits. Fresh hoppy flavour. Feels quite light. Light finish, hops. Nice, doesn’t feel like the 8% ABV that was denoted.

Botella de 33 cl en el momento en cimmeria el 07-12-2014.Color ámbar algo anaranjado turbio con espuma beige de poca retención. Aromas ligeros maltosos algo dulces y afrutados. Sabores de maltas y cereales fuertes y algo de frutas tropicales acabando con suave amargo. Cuerpo medio con 8.5 vol y fácil de beber. Buena en general, algo tosca y de cuerpo poco espeso para ser una imperial ipa.

Very nice hoppy aroma, crisp and fresh. Howver it’s a bit sticky. Pleasantly hoppy. Sweet body, but decent carbonation. Sweetish hops and malts, best on the nose, but an OK hoppy ale. Nicely hoppy, balance good for a DIPA. Could rate this higher one a little higher, maybe, perhaps I have a little palate fatigue.

Hazy orange beer, white head. Juicy grapefruity nose with hops, resin, malt, sweet hints, caramel. Flavor is hoppy, grassy, toasty notes, malt, hint of caramel. Hoppy-bitter finish. Nice one, juicy and very drinkable.

Golden honey pour. Chalk white head and lacing. Good looking beer. Very floral aroma, with pine and citrus in the background. Thin to medium body, leaves a bitter coating on the mouth. Great IPA.
