The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Disclaimer: This beer is almost a year old, has a ton of sediment, so that will obviously affect my rating. Good. Strong malt caramel, dry bitter taste. Sweet and earthy.

Light amber golden color. Punchy nose with tangerine, grapefruit and spicy hoppy character. Big full body that I found a bit boozy - I thought this beer was only 7%. Nicely balanced and is surprisingly light for 8.5%. Modest bitterness, nice stuff and very approachable.

From old notes. From tap at Copenhagen Beer Celebration 2012. Light hazy golden orange color with off white head. Hoppy citrusy and caramel malty aroma. Sweet and biter taste. Medium oily body with soft carbonation.

12 oz bottle. Hazy amber with an average off-white head. Aroma is of heavy florals, caramel, light herbal, fresh carrots, and pine. Taste is of pine, heavy herbal notes, woody hops, and light resin with some boozy notes.

Bottle. The look is clear, whitish colored head, and copper in color. The smell is salty, hops, rich, fruit, blood orange, and ok. The taste is rich, fruity, alcohol, nice, hops.

Keg at the 4th Copenhagen Beer Celebration, Session I, 01/05/2015. Lightly hazed orange amber with a decent light beige cap. Nose is citric pith, bitter orange, spice, mandarin, light grapefruit. Taste comprises juicy hops, tangy citricana, light bread, spruce, grapefruit. Medium bodied, fine carbonation, semi drying close. Ok easy drinking DIPA.

Draught at Bashamichi Tap Room, Yokohama. Cloudy orange with slim white head. Aroma of citrus orange, orange peel. Nice bitter sweet mix in the taste, some spice. Hoppy with sweet malts. Medium body, low carbonation.

Tap@CBC2015, Yellow Session - fuzzy amber pour with white head. Sweet malty and tropical fruity aroma and taste, pine and herbal hoppy qualities throughout, very nice brew.
