The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Aromatic skunkweed on the nostrils. Not getting the citrus that others have reported, but definitely some herbal dark cheesy fruity notes in there. Leaves the pallet clean.

Pours a vibrant orange with pretty white bubbly head. Aromas of candy corn, sweet malts, maybe some vanilla. Sweet, bready, and malty flavors with a nice hop finish. This one is more about the malts. A fairly standard double IPA.

Pours a light to medium orange gold color with a thick white head. The liquid is fairly cloudy, though I didnít really try to keep the sediment in the bottle and thereís quite a bit of it. The head is medium sized and looks like a blanket of white cotton candy. Itís a sturdy layer of fine bubbles that sticks around for quite awhile. The aroma is somewhat underwhelming. I fear that itís a result of shipping and age, but I bought the bottle soon after it hit my local storeís shelf. At any rate, Iím getting too much pale malt. The hop aroma is certainly present but mild. Thereís orange, grass, pineapple, berry, lemon, mint. All good stuff, but I wish it was dialed up in intensity. On the other hand, the taste shows off more of the hop flavor than the aroma. Itís full of juicy, tropical fruit flavor. Big on tangerine and pineapple. Bitterness is handled well, a crisp bite that doesnít overpower the hop flavors but still cleans up what little malt sweetness is present. The beerís pale malt backbone is well in the background, maintaining its supporting role. Light on the palate. Normal, unremarkable carbonation. This is a solid beer, and I think the aroma was once there. Iíd love to try it fresher in the future. That said, I think reviewers should rate the beer as they find it, given reasonable circumstances. As a consumer, it doesnít really matter to me how the beer tastes under ideal conditions. It matters how it tastes when I drink it. And thatís probably enough ranting for me.

Bottle in Gonpachi Nishiazabu. Poured a hazy yellow amber colour. A very aromatic IPA. Bitterness is there but quite restrained, more focus on flavour with floral and herbal hop character plus a bit of citrus. Dangerously drinkable for the abv. Good stuff.

A bunch of nice things going on in this. Nicely bitter without being all shouty and annoying, Nice sweet things. Nice citrus too, I got lemon, but then thatíd be me. Tends to a dry finish which isnít a bad thing.

Poured a cloudy opaque honey colour with a one- to two-finger off white foamy head that retained well and laced poorly. Carbonation high with small to very small bubbles forming numerous trails. Aroma of pleasant fruity hops, possibly tropical fruits. Taste of semi-sweet caramel and very strong citrus hops. Light to medium body. Smooth, a bit dry and with a hoppy finish. A nice IPA.

4.75 oz. draft sample. Hazy yellow with fast diminishing head, little lace. Aroma has a soft fruit tones with a moderate herbal hop influence.

Flavor is much like the aroma. Lightly fruits (peach and grapefruit) citrus rind, with a drying herbal hop character in the finish. Bitterness lingers for a good amount. Medium body and carbonation. This is a mighty fine brew. Pretty solid overall.

Sample @ CBC 14. Pours an unclear orange beer with a big white head on top. Aroma is orange, lemon and grapefruit. Flavor is moderately bitter, loads of citrus in caramel sweetness in there. Greatly balanced. Long, medium sweet aftertaste. Nice one.

Bottle pour. This one is a little different. A little light for an imperial IPA, but a lot of flavor. A lot of hops up front with a bitter finish. A boozy aroma, but it doesnít really translate to the taste. Some citrus fruit and bread flavor as well. Unique, and I can say I really enjoy this.
