The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Butelka 0,33 l. Aromat słodkich cytrusów, żywiczny, sosnowy. W tle karmel i miód. Barwa bursztynowa, mocno zamglona, mętna. Piana biała, o średniej obfitości, w większości drobna. Dość szybko opada do cienkiego kożuszka, nie zostaje na szkle. Smak umiarkowanie słodki (owoce tropikalne, na czele marakuja i mango, w tle nuty słodowe, karmelowe) i umiarkowanie gorzki (grejpfrut). Finisz długi, sosnowo-grejpfrutowy. Alkohol świetnie zakamuflowany. Wysycenie średnie. Piwo bardzo pijalne.

Hazy, dull orange and still with a short-lived lather of white. Floral, rose petal and orange blossom nose with ample tangerine and peach - very pleasant. A light touch of diacetyl and honey upfront compliments some heavy handed hopping in back. Bitter and long with a heat from the alcohol. Toasted, granola notes meld in well. Fruit is bitter, citric and drawing. Body fills out as it warms with moderate carbonation. This is a beautifully balanced, characterful ale. Loved it! (36cL, BB 02/02/16, gift)

Bottle to cup. Sweet citrus/pine nose. Cloudy tiny yeast particles suspended in golden orange. Malt forward then à sticky sweetness, the hops a bit backstage but linger citrus. Medium toward a richer body.

Keg. Hazy copper with a medium sized off white head with good retention and lace. Nose has wood, herbs, dried green plants. Flavour also has some light wood, green plants, honey, light alcohol, caramel. Full body, soft carbonation, filling sweetness, no rough bitterness, soft mouthfeel. Not bad.
