The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

A delicious brew that is both full bodied and perfectly balanced. Low(ish) alcohol content for the style means one can enjoy a couple more than one would be able to ordinarily too - and that is a plus.

Wemp. Hoppy, dry for sure, more AL% than the RS IPA and very hard to split the two. Anywhere else cut and dry but these two are very similar.

Bottle, 11C. Almost clear amber with a tight white head that lasts well. Aroma of mandarins, grapefruit, hay, hints of herbs. Medium bodied, lowish carbonation, quite creamy. Sweet and bitter citrus with herbal touches, gracile and quite dry throughout. Moderate to high bitterness with lingering grapefruit and a little pine. Not all that exciting but classy.

Rating #887 - January 6, 2014 - #mondaynightbeers @RevolutionYeg - 8oz on draught, 7.5%.. Clear golden-yellow pour with a bubbly white foam, spotty lacing. Citrusy sweet, mild floral, grassy hops on the nose.. Mouthfeel crisp, mild alcohol warmth, low-medium carbonation. Taste is sweet orangey lemony notes with the spicy tang and huge dry hop bite lingers into the finish. Tubular.

Murky brown colour with a small white head. Aroma is not that strong, mostly hops and some grass. Mouthfeel is light, tingly, little carbonation, very easy to drink. Taste is bitter, not too much, a little bit dry. Very nice hoppy character. Itís a pretty good, not too over the top strong, IIPA.

Bottle 0,33l. Pours a deep amber colour. Nice head. Aroma of nuts, citrus and some undefinable. Taste is pine, grapefruit, honey and cinnamon.

Bottle. Pours cloudy dull orange gold with well retained and foamy off white head. Aromas of salty grain, citrus, grassy pine and lemon. Medium light chewy body, salty caramel malt body and assertive hop bitterness. Finishes light and refreshing, moderately bitter, lingering sweetness tofee and a light mineral-like character with a lingering hop flavour of oranges, lemon and grass.

Bottle from Drinkmonger. Murky golden body with a thick off-white head. Excellent lacing. Lovely aroma of lemon, custard, caramel and orange. Flavour of herbs, grassy hops and lightly roasted malt. Itís bitter and dry, but the hoppy flavours arenít very defined or flavoursome. Medium to full body with a slick, oily texture. Soft carbonation. A fairly generic, hoppy IPA, but lacking complexity of flavour.

Very, very smooth, bitter hops aftertaste, floral aroma, Iím not a massive IPA fan but I quite like this.
