COMMERCIAL DESCRIPTION
The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle. Pours cloudy dull orange gold with well retained and foamy off white head. Aromas of salty grain, citrus, grassy pine and lemon. Medium light chewy body, salty caramel malt body and assertive hop bitterness. Finishes light and refreshing, moderately bitter, lingering sweetness tofee and a light mineral-like character with a lingering hop flavour of oranges, lemon and grass.

Bottle from Drinkmonger. Murky golden body with a thick off-white head. Excellent lacing. Lovely aroma of lemon, custard, caramel and orange. Flavour of herbs, grassy hops and lightly roasted malt. Itís bitter and dry, but the hoppy flavours arenít very defined or flavoursome. Medium to full body with a slick, oily texture. Soft carbonation. A fairly generic, hoppy IPA, but lacking complexity of flavour.

The head is ok, body cloudy, blond-brown. It smells creamy, malty. The taste is sweet, creamy, less hoppy, bit fruity, to mild, my one is probably a bit old?!

On tap at the Underground Tap & Grill, amber color, with a white head, mild floral citrus, piney, grassy, leafy hoppy nose, with a bready, pale, toasted, caramel malt, light lemon, grapefruit peel note, and a faint honeyed lemon lollipop accent in the aroma follows through on a medium-bodied palate with a nice sweet candied lemon, grapefruit peel, flowery leafy, grassy, piney, citrus hoppy character with a lemon marmalade, lemon pie crust, lemon, lime zesty flavours, with a light mellow toasted, pale, caramel, bready malt undertone, leading towards a sweet honeyed pale, toasted maltiness, good lingering piney, grassy, leafy citrus hop bitterness finish.

Half finger head, fantastic floral and fruit notes. Hazy straw color, a little sweet develops into citrus grapefruit, but finishes a little too bitter for my personal taste. Great as an ipa

Bottle purchased at Louisville Beer Store. Hazy orange color with a huge white head. Nose consisting of malt, pine, some citrus and honey. Malty flavor with orange and pine character along with bitter grapefruit before a piney hop finish. Pretty solid.

Appearance is great. Deep amber colour. Nice head. Subtle aroma. However donít think this was too fresh. Taste is more on the sweet side, which gives me the idea hops have worn off. Ok beer nothing too amazing.
