COMMERCIAL DESCRIPTION
The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Fantastic IIPA had on-tap in Tokyo at the Baird Taproom. Easily mistaken for a Stone offering or even Dogfish. If you’re in Tokyo find the Baird Taproom off the Harajuku stop Takeshita exit, go past McDonalds and turn left, end of the block on the right.

Cloudy light orange beer. Thick, foamy head. Not a ton of aroma for how powerful the hops are, but what there is is citrusy and floral. Bitter and astringent. Sharp bitterness at the beginning that fades as the drink continues.

UPDATED: JUN 11, 2012 330 ml bottle. Pours cloudy golden with foamy white head and lacing. Strong fresh hoppy and citrus aroma. Summer in a bottle. Wow, great well balanced citrus, bitter but not too bitter, sweetness follows but the dryness kicks in. Want another swig. This is good. Slight caramel flavour comes through. Beautiful!

Bottle 330ml. Exceptional beer. Aromas of grass, apricot, and caramel. Taste starts sweet, with bitterness taking over for a very long finish. Palate is creamy, with a medium to full body. Amber, with a frothy white head.

360ml bottle. Heavy in the glass. Great deep copper color with a smooth even layer of sand coloured foam. The hops in the aroma pack a powerful punch and really set you up for what is to follow. Big strong mouthfeel with a smooth velvetness to it. Great flavour and all round great beer.

A lightly hazed orange colored beer with a small, short lived off white head. Lovely hop scent, reminiscent of Stone IPA, yea....it smells that damned good! Tastes just as good with a thick, chewy, orange blossom honey & cookie dough malt initial hit, quickly followed by massive industrial hops. Under this is a complex, tangy, lambic like flavor. Make no mistake about it, this is one well constructed beer and just might have moved into my "Favorite Japanese Beer" position! To top it off, I met two gorgeous young ladies at the brewpub!

Bottle from BrewDog website. Cloudy orange-amber coloured with strong bitter orange marmalade flavours, toffee notes and a bitter-sweet fruity finish. A fantasic American style Imperial IPA!

Hands down the best IPA I’ve had on draught from Japan, sadly the bottle isn’t as good. Very fruity aroma, slightly tropical and lots of hops. Great, full hop flavour with lots of fruit to balance the bitterness.

UPDATED: NOV 27, 2013 11/26/13 Tap at Birrera Bubble Craft, Osaka. Aroma: Floral hop, orange, dominant aroma of apricot, pine hop Flavor: Floral, orange, orange peel, apricot, pine hop and finishes with a long but moderate bittering. Comment: Best pint of this yet. I’ve probably underrated this in the past. Superb balance of citrus and stone fruit flavors, bittering hop, body and alcohol. Less in your face than the big West Coast style, this could be the poster beer for balanced Imperial IPAs. Notes from 11/2011 (Scored 39 on this occasion). Aroma: earthy malt, citrus hop Palate: big but balanced Flavor: earthy malt and citrus like the aroma. Very long, sustained finish. Comment: One of my favorite, ever-reliable Baird beers. Chris said this one had 6 additions of hop and 2 dry hop additions.
