The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle. Pours a hazy medium amber (bit of orange tinge) with a thin white (tinge of green) head (bottle fermented). Aroma - hops, floral, citrus. Taste: Very hoppy - lots of citrus - lots of bitterness - not much for malt underneath - but very flavorful in the hop realm. Finishes with a grassy hop bitterness. Warming mouthfeel... very good. Probably the best beer out of Japan that I’ve ever had...

Cloudy orange pour with a fluffy lasting white head. Lacing coats the glass. Aroma is overripe peach, citrus, earth, and toffee. Taste is a little on the sweet side with more overripe fruits, earth, citrus zest, and caramel with a hint of dates. Finishes dry. Really interesting IPA.

bottle@ Gambrinus, Tartu. Pours orange with small yellowish head, disappears quickly. Aroma is malty, sweet, apples, fruits, citrus.Taste is bitter and sweet, bit watery at first, slight citrus, malty, aftertaste is weakly bitter and sweet, some spicyness.Medium body, and medium carbonation. Not bad for a japanese.

Bottle 33cl, a cloudy copper beer with medium head. Nose is on exotic fruits, apricot, and red fruit touch. Aroma is on sweet malt, hops resin, pine, floral, quite bitter, orange notes, berries touch, vanilla, good.

Bottle bought at the Pearl Harbor Memorial and Pub .. . Gold .. Solid foam .. Resin, earth, mild Apple skin, and mild wood .. Decent, what you would expect from a ipa from Japan .. . Very good now!!

Pours pale golden, unclear with small white top. Aroma balanced, medium intense light caramel malty and dominant unique citrus kind of hops. Later becomes more boozy on nose. Taste is sweet, light bitter, without "should be" dry finish. Sweetish aftertate, malty and less hoppy. Weird to be IIPA, but mild and pleasant IPA like.

Bottle at Craft, Bangkok. Poured a hazy medium amber with a thin broken white head. The aroma is big nettle grassy hop. The flavour is strong bitter with a rich woody resin hop bitter, light metallic, light toothpaste palate. Medium bodied with average carbonation.

0,33L bottle (from Uba ja Humal, Tallinn), BB 28.05.2015, ABV 8.5%. Pours hazy amber with off-white head. The head stays for a moment. Aroma is sweet, tropical fruits, sugar, alcohol. Flavor is sweet and bitter, citrus, tropical fruits, grass, malt. Finish is dry bitter. Overall: alcohol is showing a little bit too much, but otherwise ok. I guess a fresher bottle would be better.

Golden colour, firm white head. Aroma of hops. Citrus, tropical fruits. Fresh hoppy flavour. Feels quite light. Light finish, hops. Nice, doesn’t feel like the 8% ABV that was denoted.
