COMMERCIAL DESCRIPTION
The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japanís Suruga Bay is deep (it is Japanís deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

Bottle. Pours cloudy dull orange gold with well retained and foamy off white head. Aromas of salty grain, citrus, grassy pine and lemon. Medium light chewy body, salty caramel malt body and assertive hop bitterness. Finishes light and refreshing, moderately bitter, lingering sweetness tofee and a light mineral-like character with a lingering hop flavour of oranges, lemon and grass.

Keg @ Pizza Paradiso. Amber with a small head. Nose of honeydew melon, cantaloupe. Marzipan, lychee and tea. Taste is of lemon tea. Spruce, pepper. Apple and dirt. Light body, slightly oily. Cool.

Tap at Craft Beer Works Kamikaze, Osaka. Hazy orange color, small steady white head. Aroma has pine needles, resin and mango-like fruityness. Medium-bodied. Piney (spruce?), dry, resiny hoppy flavor. Finish has grapefruit too. Easy to drink.

Bottle at Winking Lizard Tavern (Independence) A golden/amber colored pour with a medium white head and lace. Hoppy, fruity, sweet aroma. Tastes fruity, hoppy, bitter and slightly sweet, some caramel too Medium to full body. Nice complexity in this DIPA.

Bottle from City Beer. Pours cloudy amber with a thick off-white head and an earthy citrus aroma. There is a hearty pale malt flavor that starts a bit sweet, then becomes more bitter and dry. Refreshing and easy to drink.

Tap. Pours Hazy deep golden with an average, white head. Aroma of caramel, peach and grapefruit. Sweet flavor that ends up dry and nice bitter. Medium bodied, oily texture and soft carb. A very nice DIPA.

Aromatic skunkweed on the nostrils. Not getting the citrus that others have reported, but definitely some herbal dark cheesy fruity notes in there. Leaves the pallet clean.

Pours a vibrant orange with pretty white bubbly head. Aromas of candy corn, sweet malts, maybe some vanilla. Sweet, bready, and malty flavors with a nice hop finish. This one is more about the malts. A fairly standard double IPA.

Pours a light to medium orange gold color with a thick white head. The liquid is fairly cloudy, though I didnít really try to keep the sediment in the bottle and thereís quite a bit of it. The head is medium sized and looks like a blanket of white cotton candy. Itís a sturdy layer of fine bubbles that sticks around for quite awhile. The aroma is somewhat underwhelming. I fear that itís a result of shipping and age, but I bought the bottle soon after it hit my local storeís shelf. At any rate, Iím getting too much pale malt. The hop aroma is certainly present but mild. Thereís orange, grass, pineapple, berry, lemon, mint. All good stuff, but I wish it was dialed up in intensity. On the other hand, the taste shows off more of the hop flavor than the aroma. Itís full of juicy, tropical fruit flavor. Big on tangerine and pineapple. Bitterness is handled well, a crisp bite that doesnít overpower the hop flavors but still cleans up what little malt sweetness is present. The beerís pale malt backbone is well in the background, maintaining its supporting role. Light on the palate. Normal, unremarkable carbonation. This is a solid beer, and I think the aroma was once there. Iíd love to try it fresher in the future. That said, I think reviewers should rate the beer as they find it, given reasonable circumstances. As a consumer, it doesnít really matter to me how the beer tastes under ideal conditions. It matters how it tastes when I drink it. And thatís probably enough ranting for me.
