The mikans used in this brew are fresh, succulent, and local -- harvested on the Heda land and by the hand of our carpenter friend, Nagakura-san. The Baird brewers hand-process the harvested mikans, shaving off the outer skin of the peel and pressing the juice. Both peel shavings and juice are added to the brew at different stages of production. The mikans serve to add depth and complexity to an already sumptious ale; their role is to complement, not dominate. In addition to mikans, the 2009 Carpenter’s Mikan Ale incorporates a grain bill including Maris Otter pale ale malt, wheat malt, unmalted wheat and two types of Japanese sugar (sudakito and akato). The hopping schedule features cirtrusy Centennial and Cascade varieties including dry-hop additions to the conditioning tank. The combination of mikans and citrus hops provide an exquisitely complex yet balanced fruit character. The wonderful aromatics of this character waft gorgeously from the billowy white head that forms in the glass. Final transport to beer Nirvana comes courtesy of the tight and spritzy natural carbonation that works to keep you tastebuds fresh and alert.

brewed with mikan fruit juice and mikan peels; pours amber orange with mikan sediment, initial bright mikan off-dry juiciness, then a deep bitter mikan peel finish. The bitterness is gentle, finishes long and lingers on the top center of the tongue and rounded at the back of the throat. medium complexity, juicy mouthfeel (medium firmness), medium depth, med-long length. The bitter finish holds it all together. 30/70 mikan flavour/bitterness.

Bottle shared by Butters at Slutfest 2.0. Pours clear copper with a small, fizzy white head, short retention with light lacing. Aroma is average malt (biscuit, straw, bread), average hops (citrus, pine), and average esters (fruity) with notes of minty orange. Sampled at Slutfest 2.0. Good hazy orange pour iwth small whitish head. Sweeter and richer than the summer version. Nose is like spicy woodsy nuttiness. Sage? Unique. I prefer this one. Orange citrus, but not as bitter.

20110413 Bomber from State Line. Cloudy, kind of gunky bright amber with lingering white froth. Aroma of tangerines, wheat, almond soap, pear, white grape. Hefty body cleaned up by a bright acidity that reminds a bit of tonic water. Peppery and slightly woody. Pleasant, unusual. These Baird beers are interesting.

Appearance alone makes me want to taste it. Aroma is hard to explain...I have all these images of rustic vegetable gardens and fields. Trying to pull a word from my brain and all I get is "Round". Taste is equally perplexing and enjoyable. This ale is smooth and relaxing while at the same time citrus and lively. Baird out did their selves with this one.

Cloudy brown beer. Softish palate. This has the same flavour as many IPAs - orange and grapefruit but in this case the flavours are obviously coming from fruit rather than hops - if that makes sense! Refreshing and somewhat tart!

From the Louisville Beer Store - Pours bright golden with yeast floaties and a fully receding off-white head. Notes of sweet citrus, tart, toasted malt, yeasty wheat softness, bitter hop. Medium bodied with soft carbonation.

Pours hazy golden, white head. Aroma is much like an APA, very citric hops maybe that’s the mikan?
Flavour is initially very orangey, fading to a light lemony bitterness. Very pleasant.
