Can there ever be enough permutations of the great India Pale Ale style? Of course not. In this beautifully nuanced, Japanese esthetic-influenced ale, we marry in the conditioning tank ample dosages of earthy-herbal dry hops (Hersbrucker, Styrian Golding, Santiam) with deft additions of whole leaf Shizuoka green tea. The result of this international botanical marriage is, in a word, sublime.
Baird Beer, as you know, is unfiltered and the addition of whole leaf green tea to Wabi-Sabi IPA has contributed a very strong particle sediment. Do not fear or fret, this is all-natural good stuff and it tastes great! You will not find this in a can or mug of your favorite industrial brew.

Aroma is spices, white bread, malts and light hops. The flavor is citrus, fruit/tea, mild hops, malts and a tart/increasingly bitter finish. One of the few times tea flavor in a beer isn’t a negative.

33cl bottle. As "Pale ale". Within its suggested best by date. Hazed golden pour. Aroma is herbs and sweetness. Flavor is sweet but herbal and a bit vegetal, not spicy though, feels stale.

Keg at Bishops Arms Folkungagatan, Stockholm. Cloudy golden, creamy head. Butter tea and grapefruit in a rather gentle aroma. Mid sweet with medium body and rounded mouthfeel. Fruity with notes of caramel and citrus. Mid bitter finish.

330ml bottle (Hopner, Tallinn, meet the brewer tap takeover)
Ewww, right from the start, I get the coconut I associate with Sorachi Ace, and dislike. Light palate, and aggressively carbonated. Light level of malts, some husks, some biting bitterness, and a little bit of spicy heat too. Tongue left with a tingle and a burn. The quirk doesn’t really press my buttons, and S.A. is a curse if I ever think I’m finding it. And CO2 too high.

Poured from a 330ml bottle into a tulip glass at Beer Revolution in Edmonton a cloudy orange color with a finger and a half of white head that leaves some spotted lacing on the glass. Aroma is pleasant but mild with some herbal and earthy notes. Taste is an earthy and herbal hop bitterness with a grainy malty sweetness. Medium bodied with decent carbonation. Overall, this is a unique IPA that must be sampled.

Dark orange color with large head. Interesting aroma. Kinda floral, earthy, not as fruity as other IPAs. I guess you taste that the hops used are not the classic IPA hops. Not sure if I notice tea in there, if so, it blends in very well. Dry, malty taste, but fresh. Slightly bitter finish, smooth low carbobation, solid brew.
