COMMERCIAL DESCRIPTION
Aroma initially characterized by pepper that fight in a field ruled by a rich fruity fragrance of dried fruits with ripen banana, toffee and a soft sweet chocolate fragrance. The attentive taster shouldn't miss a sharp floral of rose and a sensation of must of wine always pleasant.

750ml bottle (?). BB2010-02, drunk 2010-11.
6 Sweet treacly aroma at first, then some burntness, then some prunes and dark fruits, and finally some alcohol. Maybe I served this a little cold, I’ll let it evolve a bit before continuing.
4 Rich reddy brown, quite fizzy carbonation, head doesn’t stay at all, but is continually being generated. It did open with a pleasant pop, so I think it must have conditioned well in the bottle.
7- Retronasals a little alcoholic and muddy, some pencil sharpenings from hops. Taste quite cakey, burntish chocolate cake. Alas some alcohol creeps through too, you can’t forget it’s a strong beer.
4- Palate quite crisp with carbonation, which helps cut through the sweetness. Drinking it nearly a year after its BB was 100% deliberate. We’d had a few too sticky beers from Baladin, and thought a Noel would be too sweet, so wanted the conditioning to be given a chance to kick in. Which it seems to. Sweetness is not the enemy, so I think we did the right thing. Finish has some dry bitterness, bouncing between liquoricey bark and over-bitter chocolate.
13 Certainly quite nice, but missing the wow factor. Maybe I made it too dry with the extra ageing, maybe I boosted the alcohol too, I don’t know, both would be errors. But the lack of stickiness and crispness of the palate makes this a sipper that doesn’t frighten you off - it’s trying to be light. I wouldn’t mind having a sip of a young one, to see what effect we had.

Bottle. Dark brown pour with a tall, sturdy tan head. Tons of sediment in this even though I’m pouring into a 0.4L tulip and it’s half filled. Aroma is herbal and chocolatey. Maybe dried flowers and fruit as well. Taste is chocolate, spices, herbs, dried flowers, ripe fruit, chocolate covered banana, and cocoa. Body is medium with strong carbonation. Dry towards the end. Finishes with more chocolate covered banana, spices, light herbal notes, flowers and cocoa.
