COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottle. Pours a hazy light brown-orange body with floating sediments and a big foamy white head. Aroma is dense tones of blue cheese, ripe apricot, syrup, grains and heather honey. Complex and original. Taste is cereals and grains, heather honey, floral grass notes, hints of camomile and herbs. Not as impressive as in the aroma, but starts out pretty nicely. After some time, however, it sort of rolls over and becomes very boring. Fizzy carbonation (which I find suitable as it provides a bit of freshness), medium body. Pretty nice, but could have been a lot better.

Hazy darker yellow body, white head. Aroma has nice saisony spices and fruity yeasty notes. Real treat, good saison.

Very uncommon to be a saison. Though it’s made with many spices and different hops, it’s not spicy like a saison is meant to be. Looks and taste more like a blond ale. But it’s ok

750ml bottle bought at Vinmonopolet Hamar and shared with friends. Gives a good shot followed by smoke when opened. Creamy, airy, white head. Dotted spots to the glass. Cloudy golden body. Sweet fruity nose, hints of lemon, lightly spiced. Sweet orange taste joined by clove and wheat-like sweetness. Dry bittersweet end. Soft in the mouth. Food friendly and with some interests (Ottestad, 15.02.2013).

Draft. Amber beer with a whitish head. Acetic and sour aroma. Sour and fruity flavor with light oak. Medium bodied. Sour and light acetic notes linger with fruitiness and light earthiness.

Draft at Alla Spina. Poured a reddish amber with no head or lacing. Very fruity, fresh dark berries, light corriander. Light bodied with only a faint hint of tartness.

Orange hazy, big white head. Smells of light malts, yeast esters, phenols and bakers yeast - with som faint spices in t he back. Moderate sweet, quity spice infuses, yeast flavors as well and some malts. Light bitter. This is a strange one; i don’t find it very saison’ish; not light either. It’s kind of a thick cerial soup with yeast and spices. Not the best from this brewery

Bottle from Vinmonopolet. Pours hazy golden with a small white head. Aroma of sweet malts, light fruity spiced. Taste is complex malty, with lots of spice, orange peel, pineapple, caramel. Fresh, with lots of malty sweet goodies. Smooth palate. Dry end, Very good one.
