Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Aroma of lime peel, koriander, cammila, siltyness and a hint of bbq coal. Slightly cloudy yellow. Tinckling starts. Cinnamon flavour staers, then fresh herbs (koriander and cammila are nicely occuring) and then there is a bit of pepper. Very round taste, nice body. Nothing is too much or too less. Great!

Bottle; pours cloudy orange gold with a white head; spicy aroma with citrus fruits and yeast; taste has citrus fruits, caramel, and yeast; spicy finish; I liked this more and more as I drank it

Rating #1062, flaske fra Open Baladin i Rom. Gylden, uklar øl med flot, stabilt, hvidt skum. Lækker frugtig duft med masser af abrikoser og en lignende smag, men med en del krydderi oveni. Medium tykkelse og tyngde.

Tap.Clear golden colour with medium head.Aroma is strong spicey of coriander and cinnamom,good well balanced mouth feels and fresh taste of herbs fruits and spices really nice beer.

Straw golden body, thin head. Subtle floreal (chamomile) and fruity yeast aroma. Honey sweetness up front, elegantly balanced by a slowly increasing, longly lasting, distinct pink pepper-like finish. Mouthfeel is medium to thin. Mild and smooth. Le Baladin stay true to their tradition, offering another sophisticated, innovative and style-defying creation where nothing is too bold or extreme.

From bottle @ HK’s Øl-messe 7th February 2015. Not much aroma, some spice. Light hazy yellow with small white head, not lasting. Lots of spices when tasted! Moderate+ sweetness, light bitterness. Light+ body, soapy texture, avg. carbonation, moderate spice lasting.

Golden color with lots of small floaters, white head. Fruity nose, spicy, Belgian yeast, pepper. Caramel taste, light malty, pepper, Belgian yeast, hint of chili heat. Medium body, soft carbonation, warming spice.
