COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

An unclear orange beer with a fast disappearing white head. The aroma is sweet spicy with coriander standing out. The flavor is of wheat and oranges, while the body is thin.

Bottled: Light orange coloured. Dusty. No head. Light spiced and yeasty aroma. Is bland. Flavour is light fruity and has some sourness. Thin body and ends on a very dry note. Very dissapointing.

Off white weak head. Cloudy light amber color. Aroma is fruity, moderately sweet with apricots, pears and spicy notes. Flavor is moderately sweet with fruity tones, ending in a moderately sweet slightly sour finish. Light to medium bodied.

Crosling (1861) - Loveland, Colorado, USA - OCT 3, 2004
Purchased in Milan, Italy but sampled on a lonely night in Rome. Peach Skin. Strong hints of orange, lemon peel, vanilla, candy sugar, butter and pear. Light, but big for its size with some distant fruit notes; nectarine, pear, peach and lemon. An odd yeastiness. Much more a saison than a pale ale.

Cloudy golden color. Fruity aroma (peach, apricots…), white sugar. Dry, a bit fruity; average malt. A light fruitness still in the final. A very average beer.

hazy pale orange colour, the initial head quickly diminishes, very perfumy and bready nose, medium-bodied with a light fruity finish - quite artificial and without much character

Pale orange colour, nice head, really lasting. Strong apricot and peach aroma. The flavour is very fresh and fruity with hints of peach, apricot, apple and plums. The finish is spicy, with traces of corn. Really pleasant!

Golden coloured. Light bodied. Very lively, spicy and complex. A good, true to style saison.
