COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottle from Vinens Verden. Nice head with good duration. Color is pale yellow. Aroma and taste are wheat malt, yeast, hops, fruits and grass.

Bottle. Frothy white good mostly lasting head. yellow colour. Light malty and moderate hoppy aroma. Light bitter flavor. Average moderate bitter finish. Oily palate.

08-APR-2011, bottle @Sonni, @Ulkløbben tasting, from "Fish & Beer". Light yellow, low white head. Nose is yeasty and wheat-like. Citric, lemony, quite spicey and complex with herbs and honey. Fine wheat. Not a Saison, right? And not the best weat, though.

Bottle. Pours a hazy golden straw body with a white head and faint retention. Dry earth y and herbal hop tones. Lemon and light pepper like yeast tones with a a mild spicy and drying body. Light residual sweetness. Pretty good.

Bottle. Golden beer with quite an active body and light, fizzy and soon disappearing head. The aroma is malty fruity yeastiness, and the flavour is heavily yeasty with a sugary malty finish. Overall a reasonable sweetish yeasty beer.

750ml bottle from boutip. shared with jsprime. light yellow with a white head and huge chunckies. ugly. nice peppery floral aroma. clean fresh tight complex flavour. good but ugly looking. would drink regularily if not $1770 per bottle
