COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Pours a cloudy gold with short lasting white head. Light citrus and spice aromas. Flavours bring orange zest, coriander, and lemongrass. Black pepper makes a big appearance as it warms. The finish is quite dry leaving a light bodied beer near the point of watery. Very effervescent carbonation.

With Z , pours hazy dirty gold color with no head. Nose is sour and tart, with spice namely coriander. Complex taste with fruit and spices punctuated with sourness and funk. Finish is dry, short and ends on the same tasting notes. A very nice saison ! Quaff Score 7 /10

A beer of a great complexity. You can feel the aroma of oranges, that soon evolves into a concerto of different ingredients. Spicy but refreshing, sour but sweet, all balanced perfectly.

Cloudy yellow color with floaters, minimal white head. Sweet aroma with some sourness, peppery hotness and even meat. Taste is also sour and sweet with some fruitiness, pepper and spices. Medium to full body, lively carbonation. Maybe a little bit too sweet and not sour enough. //stellabeershop
