Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Very uncommon to be a saison. Though itís made with many spices and different hops, itís not spicy like a saison is meant to be. Looks and taste more like a blond ale. But itís ok

750ml bottle bought at Vinmonopolet Hamar and shared with friends. Gives a good shot followed by smoke when opened. Creamy, airy, white head. Dotted spots to the glass. Cloudy golden body. Sweet fruity nose, hints of lemon, lightly spiced. Sweet orange taste joined by clove and wheat-like sweetness. Dry bittersweet end. Soft in the mouth. Food friendly and with some interests (Ottestad, 15.02.2013).

Draft. Amber beer with a whitish head. Acetic and sour aroma. Sour and fruity flavor with light oak. Medium bodied. Sour and light acetic notes linger with fruitiness and light earthiness.

Draft at Alla Spina. Poured a reddish amber with no head or lacing. Very fruity, fresh dark berries, light corriander. Light bodied with only a faint hint of tartness.

Orange hazy, big white head. Smells of light malts, yeast esters, phenols and bakers yeast - with som faint spices in t he back. Moderate sweet, quity spice infuses, yeast flavors as well and some malts. Light bitter. This is a strange one; i donít find it very saisoníish; not light either. Itís kind of a thick cerial soup with yeast and spices. Not the best from this brewery

Bottle from Vinmonopolet. Pours hazy golden with a small white head. Aroma of sweet malts, light fruity spiced. Taste is complex malty, with lots of spice, orange peel, pineapple, caramel. Fresh, with lots of malty sweet goodies. Smooth palate. Dry end, Very good one.

Bottle. Pours cloudy gold with white head. Some sediment. Nose is lemon, sour wheat, rye, coriander, spice and florals. Medium body. Finishes a little sour wheat.

Sampled at Alla Spina with Linh, Pat, Zahra & Janine. Pours a hazy body with thin, white lasting head. Aroma is lemon, soap, zesty citrus, and sweet malt. Mouthfeel is medium with notes of earthy wheat malts, clove, spice, pepper, lemon, light tartness and other muted fruits.

On draft at rustico Alexandria. Pours a clear gold with a white head. Something of a grape Koolade aroma. Concord grape notes with subtle spices and sourness. An intriguing beer.
