Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Cloudy yellow color with floaters, minimal white head. Sweet aroma with some sourness, peppery hotness and even meat. Taste is also sour and sweet with some fruitiness, pepper and spices. Medium to full body, lively carbonation. Maybe a little bit too sweet and not sour enough. //stellabeershop

Ambrata chiara, opalescente, schiuma bianca non molto persistente. Aroma di coriandolo, scorza d'arancia, pera, pepe, camomilla, leggerissima cannella e mentolo. Al palato coriandolo, pepe, scorza d'arancia, leggera pera e camomilla, successivamente si sentono i grani e l'amaro erbaceo finale, anche in bocca è rinfrescante. Retrolfatto pepato e speziato. Corpo leggero, molto carbonata.

Tried on 13.6. at Bier-Bier saison tasting in Helsinki. Mildly hazy yellow body with quickly settling white head. Nose has lovely aromas of sweet pears, spices and white pepper. Taste is fairly dry but the finish has a lingering white pepper taste that is quite interesting. Soft carbonation and light palate. This is quite nice and different.

Bottle, 750 ml from Vrutak, Zagreb. Shared with JFK10000. Cloudy yellow, short lasting white head. Tastes and smells like cellar, moist, bit spicy, yeasty. Very weird.

Pours hazy golden color with a small head. Very spicy and lemony aroma, stuffy too, yeasty and somewhat grassy. Spicy flavor, gets stronger towards the end, some pepper and lemon, yeast rounds the palate with all the spices. Quite nice, I like the spices here.

750ml corked bottle served in a pint glass. Pours a cloudy orange color forming a small and fizzy white head. Medium retention and only few spotty lacings left in the glass. Strong spicy notes in the nose. An authentic Farmhouse ale. Sweet pale malts followed by strong notes of black pepper, flowery hops, honey, cinnamon, coriander, camomile and earthy yeasts. Slight sweet upfront in the mouth. Again, strong notes of pale sweet malts, honey, camomile, coriander, cinnamon, black pepper and earthy yeasts. In overall, a light sweet taste with nice spicy and "hot" pepper notes followed by a mild and pleasant hoppy bitterness. Light body. Medium to low carbonation. Very smooth body. Peppery aftertaste. Damn good drinkability. Excellent drinkability. Excellent beer. Masterpiece.

Very nice. Good golden color, and long lingering spicy finish - almost like ginger, but with less kick. Not what I expected from a saison, but I would gladly have it again!

Pours hazy peach with a large white head. Aromas of honey, peach, flowery esters and gooseberry. Taste is rye bread, honey, peach, gooseberry with a peppery finish. Mouthfeel is slightly creamy and medium bodied with medium carbonation.

Opaque light gold, medium white head. Hay, grain, citrus and farmyard yeast on the nose. Medium bodied (!), sweet with sour notes. Yeasty, zesty, and finishes bit dry and spicy. Nice!

Bottle from Eataly Milano, kindly delivered by a friend, many thanks.Hazy orange golden color with medium white head. Malt, oranges, tangerines, coriander, other spices. Taste, oranges, tangerines, malt, coriander, cinnamon, peppery notes, allspice, ginger and much more. Dry, spicy finish. Very good refreshing beer.
