COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottle, 5.8%. Good refreshing aroma, a bit of chalk. Cloudy yellow colour. Good stable white head. The flavour is nicely malty with good black pepper, some coriander. Other spices that I forgot. A little sweet and sugary.

The sun has settled in my glass on a clear summer’s day as I take in all the colors of orange she has to offer. A soft white head fades fast, leaving an aura of white along the edges. On the other hand, I am awash in an aroma of succulent tangerines, nectarines, blood oranges, mango, pineapple, cantaloupe, aloe, and cactus. Tropical paradise is here to stay followed by pollen and lavender. Floral esters permeates her whole nose, while lemon, cumquats, and pith joins her tiki paradise while wisps of cumin, ginger, and saffron spice up her finish. Holy tropical, floral, and spice delights. I am overwhelmingly impressed and waste zero time diving right into her awaiting depths of temptation. Spice and flowers are front and center with lavender, pollen, and a soft undercurrent of herbs picked fresh from the garden. As her spice and flowers send me off to beervana, her playful tropical side brings me right back down to tiki bar paradise. Cantaloupe, mango, nectarines, tangerines, pineapple, and coconut are all there in juicy succulent splendor; no umbrella please. My breath is on another plane altogether, exuding pungent esters of spice, pith, and green mango skin. Ooh-lala. Clean start with flowers and pollen, a full middle with tropical fruits, and a tart tingle that starts in the middle of my tongue shoots her way down my throat to the very base of my spine as goose-pimples electrify my flesh. Shazam! Uber refreshing, uplifting, and invigorating, I envision myself sitting along the Italian shore or taking in her many waterways, the sun smiling down on me, natives milling about, and a glass of Baladin Wayan in hand. Life is good.

Soak in every single word I just said, then find your way to a local beer/liquor store and demand a bottle, nay a case of Baladin Wayan for yourself and to share. In fact, stop reading this right now and GO!

Bottle. Lemon, orange, cinnamon, nutmeg, coriander and malt aroma - very nice. Cloudy yellow color with nice head. Light sweet-dry lemon, orange, cinnamon/nutmeg and malt flavor - nice balance between the sweetness and dryness but leans sweet. Excellent.
