COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

(Old BA rate - bottle) Pours with a healthy pure white head; dissipates into a centimeter thin foam. Didn’t get that much lacing. Lightly hazy marigold orange in color. Aroma is earthy, spicy, a little bit of white grape fruitiness. Yeastiness is definitely a feature. Some green peppercorn sneaks, and actually a little bit of pepper in the flavor as well. Yeasty flavor; a touch of citrus; very earthy flavor to me actually. Not bad, but not on par with the best in the style range. Lighter MF, and tight prickly carbonation. Very solid drinking actually, refreshing, nothing off in terms of flavor. Certainly not a boring brew either.

750ml Bottle: Opened with a large ’pop.’ Aroma of yeast, grain, pollen, light coriander, slight spices, and light fruit. Poured flaxen/orange/gold in color with a large, creamy, off-white head that diminished but lasted throughout. Cloudy. Very sparkling. Full of tiny, small, and medium-sized particles throughout. Flavor is lightly sweet. Tastes of yeast, fruit, slight lemon, coriander, flowers/pollen, light grains, slight spices, and a little Earth. Medium body. Tingly, then sticky, coating texture. Lively carbonation. Lightly sweet, yeast, grain, slight coriander, and slight fruit finish is lightly dry and sticky.

Sample from bottle. Pale yellow pour with white head. Aroma of citrus and white pepper, some fresh coriander in there too, smells a bit like a belgian triple to me. Taste is slightly bitter, very spicy and a bit of acidity which is kind of unwanted here. Palate is ok but a bit on the watery side (like many Italian beers?). Enjoyable, but a couple of flaws make it short of very good.

Bottle at Mondial. Pours a slight haze with ok thin lasting head. Aroma is lemongrass, zesty citrus peel, soapy, light earthy phenolics, doughy, wheat malts, spicy pepper notes with some clove. Flavor is earthy, wheat, doughy malts, a bit sharp in the middle and the end- more lemongrass, spices, some wheat, and a lemon tartness towards the end as well which kind of makes it somewhat refreshing. Not bad and spices were kept mostly in check.

6 Initialy wheaty, touch banana, but also white pepper
2 Very pale, hazy, witlike
6 Simple tasty saison, safe, few quirks, no USPs. However, there is some clove and white pepper
3 Finish does have traces of hop, and more spice
11 Not a phantom, but aspiring. Next one maybe.

Bottle. Pours cloudy pale yellow colored with a nice bubbly egg white lacing head. Aromas of lemons, coriander, brett and more spices. Dry flavor with notes of citrus fruits and spice. Tastes more like a witbier than a typical saison - tasty though..

0.75 l bottle at Helsinki Beer Festival. Hazy yellow color. Strong white pepper aroma with orange and lemon. The flavor is lemony and peppery with grainy and wheaty notes. Tastes a bit too peppery, but I like the lemon character.

(Bottled) Very hazy golden with a medium head. Aroma of pale malt and some sourish, bretty touches, but mostly witbierish lemon and spices. Flavor is mostly witbier with spiciness, but only slight saisony touches. Some stinginess comes up with warming. Medium body, soft carbonation. Ok, but quite lame.
