COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Hazy blond with a thin white head. Nose of hay and a little grainy note. Body is very thin with gentle grainy backbone. Light aftertaste, almost unpleasant wet grain, barnyard feeling, Quite ordinary blonde beer and in my opinion far from being a Saison. NB: The bottle indicated best before september 2009. Will give it a try with a fresher bottle next time.

Pours a glowing yellow with a pillowy white head. Very citrusy nose with spice and yeast. Lemon, orange, bread, mushrooms and coriander. Decent mouth feel. Nice beer.

Bottle from Nightfall, thanks! Best until 3-09. Vinous aroma with grapes, pepper and citrus. Malty, peppery, slightly perfumed sweetish flavor. Hints of melon and honey. Vinous notes. Excellent, maybe a bit too perfumed.

UPDATED: JUL 14, 2009 75cl bottle @ Ca De Vin, Millesimo. Pours hazy deep golden with a handsome creamy white head and lacings. Nose has loads of malts. Lots of spices and exotic fruits. Orange peel, pineapple, Yeast, coriander, ginger, caramel, baking powder. Sweet but with a great level of freshness. Full and smooth palate. Ends dry. Nice and well balanced. It works well.

750ml from State Line. I really enjoyed this one. A crisp and effervescent pour, golden with some orange at the edges, and with some bangin’ champagne-like carb. Strong aroma, with tropical fruits meeting spice for an appealing nose. Very crisp mouthfeel, and the spices in particular emerge nicely in the beer, with coriander and especially ginger coming on strong in the finish. Good stuff!

750ml bottle: Golden yellow pour with a pillowy white head. Very nice aroma of spicy yeast, honey malt and earth. Some alcohol rounds out the nose. The body is really peppery, which is nice. Some rye adds to the multi-dimensioned body. A very interesting take on the style. Saison is one to go to the fringe with and this beer certainly does that.

Bottle: poured a light cloudy light copper color ale with a large pure white foamy head with good retention but minimal lacing. Aroma of coriander and zesty refreshing and overall dry hops is very enticing. Taste is a nice mix between some nice Belgian malt, some coriander and a hoppy dry finish that is very well balanced. Body is quite full with good carbonation and no apparent alcohol. Well balanced between malt, hops and spices with some interesting esters.
