COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Bottle. Hazy yellow body with a pillowy white head. Spicy aroma with notes of toasted grain, herbs, grass and some earthiness. The flavor was moderately sweet and lightly bitter. It finished lightly sweet , moderately bitter and dry. Medium body with a watery, but very smooth texture and lively carbonation. Peppery flavor with a hint of nutmeg ride atop the malts which take a backseat to everything else going on. This saison is very comfortable on the tongue, yet finishes with a bite. Excellent in its complexity and sophistication.

Hazy amber with big head. Taste is a fuzzy mix of light malt and lots of spices that are hard to put your finger on. A little vanilla, lemongrass, and floral hops. Thin. Just kind of odd....not awful, but not mind blowing.

75 cL bottle. Pours clear and golden yellow with a huge white head. Aroma is mild spiced, caramel/biscuit and light yeasty fruity. Spiced to floral flavoured with a mild sweetness and vague yeast touch. Floral from back of the nose into the finish. Medium dry to slight sweet finish.

Hazy summer sunrise topped with a frothy, fluffy, hop-pocked head. Nose immediately filled with floral hops with piquant spices titillating the furtherst olfactory reaches. Perhaps nutmeg/allspice, which lends a prick of chai. Dusted malt hits a back note. Deliciously mysterious. The first flavorful impressions consist of tangerine hop and tea leaf with a minty and citrus finish. Melanoidin, dusted malt ball on the follow through pitch. A minty finish leaves the palate clean and refreshed. A fascinating medley of deep malt, fruity and floral hops, and piquant spices make this a truly World Class saison. You will continue to uncover new nuances and depth of characeterstics throughout the entire 750 ml experience. In fact, I would describe this as, like a truly authentic saison, this is not just a beer, but an experience.

Bottiglia da 75cl prima da Pietrino, poi a casa da me; entrambe condivise con due amici birrai. Una grande complessità e una splendida leggerezza ne fanno una bevanda di grande classe da potersi concedere in ogni momento e che piace a grandi e piccini. E al Cavalier Piccinini (il nuovo Beatle).

Big ol’ bouteille. Furit citrus yeast with large head that diminishes as the bottle sits there. Light, fruity, spicy and delicious.
