Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

750ml bottle: Golden yellow pour with a pillowy white head. Very nice aroma of spicy yeast, honey malt and earth. Some alcohol rounds out the nose. The body is really peppery, which is nice. Some rye adds to the multi-dimensioned body. A very interesting take on the style. Saison is one to go to the fringe with and this beer certainly does that.

Tap @ Fermentoren, Aarhus. Pours clear amber with a small white head. Aromas of rye, soap, esters, spice. Taste is light tart, soapy, spicy, citrussy, lemony.

Vestergaard (1644) - Aarhus C, DENMARK - JUL 28, 2016
On tap at Fermentoren Aarhus. Pours a light golden with a big white head. Aroma has lots of spices like coriander seeds, bay leaves, cinnamon and a slight acidity. Taste is surprisingly sour and again with lots of dry spices. Average carbonation and a medium oily body.

Beautiful unfilttered orange appearance. Cinnamon, canel and peach and fruits. Palate is quite light. Pleasant and drinkable.

heavy (2739) - Split, CROATIA - JUL 18, 2016
Jun ’16. A 0.75 l corked/waxed bottle. It poured a bit hazy yellow body with medium to big head. Quite weird, but fine aroma. Apple, peach, coriander, elderflower, regular mineral water, hint of something similar to a cheap citrus radler, but blended quite nicely here with all the components. Flavor was lightly bitter, also, as it got warmer very peppery (most realistic black pepper I’ve ever encountered in a beer) leaving the long hot aftertaste. Every new sip helped it to go away for the new lighter flavors to show up. Light malty sweetness was biscuity, chalky, floral with a hint of cucumbers, coriander, other spices, sunflower seeds. That said, it’s obvious couple of sips can’t be enough to really understand this one in its full complexity. And it’s so weird. Thinner in body, believe it or not after all, smooth (oats I guess), mineral water in the finish as well, besides aforementioned pepper. Wow, this was probably one of the most twisted beers ever, but I enjoyed every bit of it. Extreme complexity for the little ABV, luckily, not another "praised" bland saison. I’m in love with this brewery!

Bottle thanks to Bob. Hazy copper with a medium sized diminishing white head. Nose has dry flowers, pepper, hay, dust, grain, citrus. Flavour has some rye followed by pepper, hay, bread, flowers, citrus. Medium body, fizzy carbonation, some sweetness, low bitterness. Pepper in the finish. Ok, but a bit fizzy and sweet.

Bottle 0,75. Pours hazy orange with small quickly diminishing white head. Aroma of pepper, malts, citrus, herbs, grass. Taste of lemons, grapefruit, grass, malts, pepper, cloves. Medium body and fizzy carbonation.

W nosie aromaty średnio intensywne, głównie zioła, trochę kwiatów, kolendra, trochę drożdzowej ostrości, aromat słodów pszenicznych plus nuta cytrusów. Barwa jasno pomarańczowa, mocne zmętnienie, piana niska ale drobna. W smaku również ziołowo i przyprawowo, spora kontra słodowa. Goryczka niska, lekkie pieprzowe szczypanie na finiszu. Wysokie wysycenie, kremowa konsystencja. Dość ciekawe piwo, mocno przyprawowe, coś na pograniczu witbiera i saisona. Butelka do 11/2017
