COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Slightly hazy yellow body with small white head. Very light aroma of citrus, herbs, fish. Very velvety mouthfeel and a taste of medium sweet fruit, soft spices. Aftertaste is quite citric and sour, unlike when the beer first hits you.

Saison #3 consumed ’blind’ at the Pewaukee tasting. Cloudy pale yellow. Aroma dry, yeasty, tart, mild, a little bit of mustiness. Medium bodied, a bit of pineapple in the flavor. Mild sour fnish. Very light and refreshing. The more I drink this, the more it appeals to me.

Hazy golden color with a thin white head. Aroma is perfumed fruit, floral, light sweetness. Flavor is also lightly fruity, almost a touch of strawberries or raspberries, hints of honey, possibly some coriander, but very very little. An extremely well made and well balanced saison. Reminds me of fields of hay in the summer.

In bottiglia. Color giallo torbido con sottile schiuma bianca. Aroma floreale con forti note di lievito e più lievi sentori erbacei. Gusto medio-dolciastro e acidulo con un finale più spostato verso l’amaro; il sapore è leggerissimamente speziato. Birra di corpo molto lieve e leggermente effervescente, fresca e "pulita" al palato.

Assaggiata in bottiglia da 75 cl. Aspetto dorato e opaco, la schiuma però svanisce subito. Buon aroma leggermente speziato. Al palato denota un buon corpo e si sente bene il malto. Un buon finale amarognolo, delicato e molto prolungato.
