COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Pours a transparent bright copper orange with a nicely-lacing frothy white head. Aroma of grassy earthy hops and sweet pale biscuity malt. Body starts fairly true to style with a nice, carbonated sweetness, a touch of lemongrass and decent complexity and earthy balance. A nice saison.

Huge, just off-white head, slightly irregular; fully hazy yellow beer with orange shine. Spicey farmyard odours, doubtless including coriander, but also more fragile perfumes. Citrussy, exotic fruit, yeast esters. Overly spiced-perfumed taste, sweet-sour, quite citrussy; yeast-laden, bit of human sweat, bananaester, proteins. Medium bodied, but the acid, and the very high carbonation make it appear way more light. Too perfumed for my taste. Perfumed saison - for the merry boys on the fields?

My Bottom Line:
The blossoming herbal wilderness and milky coriander spiciness of this perfumy Belgian-style Ale captivate the tastebuds, especially as they are able to join the bready cereals in forming a cushiony realm.

Further Personal Perceptions:
-A veil of foam covers the cloudy white.
-Is there thyme in here? Maybe rosemary? The complex spiciness sure is intriguing.
-A touch of brettanomyces is perceived amongst the tree bark allusions.
-The soft carbonation helps the mouthfeel.
-The flavor spectrum is wide and it amazingly works.

6 Initialy wheaty, touch banana, but also white pepper
2 Very pale, hazy, witlike
6 Simple tasty saison, safe, few quirks, no USPs. However, there is some clove and white pepper
3 Finish does have traces of hop, and more spice
11 Not a phantom, but aspiring. Next one maybe.

Blind rating. Pours hazy yellow straw with a foamy white head, very sticky head. Peppery, fresh herbal hops, some citrus notes, malt (meal, cereal). Medium bitterness and acidity, sweet maltiness and yeast flavors, clean finish, some sour citrus notes. Medium and creamy body, lightly fizzy palate, overall very good mouthfeel.

Definitely one of the fruitier saisons I’ve had. Hazy gold pour with 2-finger off-white head. A lot of Bartlett pear, melon, apple, apricot, hopcitrus, and a big black pepper taste and smell, with a smooth, complex finish. Methinks this one is very underrated.
