COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Lightly hazed golden color with a confluence of bubbles, with bits of fish food adrift. Fluffy off-white head that subsides slightly and is slightly rocky. Light dough and lightly toasted bread dominate the aroma, with light herbs and spices and a touch of citrus. Light and spicy in flavor. Light wheat biscuits covered with wild herbs and spices. Rosemary, coriander, nutmeg, and minimal pumpkin pie spice. Mild ginger bite in the finish. Light and fun. THe deeper into the bottle one gets with this one the more that the spices come out. Nice light pseudo-saison.

Bottle (750ml) shared at ’Biegaman’s Second Annual Saison Tasting’ -- courtesy of biegaman. Bright gold with some slight cloudiness - later pours from the bottle had some serious chunkiness going on. Very nice aroma of mellow spice and fruit (pineapple, mango). Medium bodied. Flavour - wow, really interesting - getting some pineapple and anise, a bit of pepper and citrus, and a hint of yeast. Really nice beer!

Bottle: Pours a copper bronze color with nice white head and ample lacing. Nose of ripe cantelope, peach and kiwi, some nice fruity bright yeast notes and a grassy light citrusy hop. Some ripe earthy hops and rye, nice clean smooth fruitiness along with the citrus and hop. Banana esters? Bready tail and mouthfeel. Fun and satisfying saison. A little agave maybe?!

Bottle courtesy of Duane. Copper, white head, highly carbonated. Soft pale malt aroma up front. Flower petals, yeast and faint fruit in the background. Flavor is very yeasty. Tropical fruits, (pineapple and orange), mixed with some spice and bready backbone. Finishes very clean though. Well done!!

TITW-II. Pale, hazy straw body with a white head. The aroma is pepper, herbal, floral, lavender and lemon. The flavor is lemon, bread, pepper and peaches. Medium/light body, fairly dry with light carbonation.

The aroma is malty with moderate notes of toasted grain; hoppy with moderate-to-heavy notes of herbs and lemon zest; yeasty with light notes of horseblanket and dough; light miscellaneous note of something like currant/blackberry, and coriander/spicy alcohol.
The flavor is moderately sweet, moderately tangy and lightly acidic with a long, moderately-to-heavily acidic, lightly sweet finish. Sort of feels like the finish on a lemon-lime soda. The body is light, the texture is watery and the carbonation is fizzy.

0,75 l bottlle, Mntana 104, Parma. A fruity beer, with just the proper sourness to balance it. Some spice, and a little yeastiness, too. A full flavour beer, this is more for sipping on its own than for drinking with food. Well, being in Parma, some cured meat would be all right. Good stuff.

Pours hazy gold into a tulip. Fluffy white head leaves slight lacing as it recedes. Fantome-like aspirin aromas. Crisp and fruity with a lasting pepper finish.

Bottle @ YNWA, Kolding. Pours a muddy pale yellow with a medium frothy yellowish head. Flavour is sweet, very spicy, oranges, lemons, melon. Nice mouthfeel. Flavour is very crisp and spicy with a great great balance. A good saison.

Bottle Pours out a cloudy gold topped with a white head. Aroma of sweet fruit and flowers. Tast very juice sweet with all kinds of sweet fruit. A little spice. A very nice brew.
