COMMERCIAL DESCRIPTION
Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

750ml corked bottle served in a pint glass. Pours a cloudy orange color forming a small and fizzy white head. Medium retention and only few spotty lacings left in the glass. Strong spicy notes in the nose. An authentic Farmhouse ale. Sweet pale malts followed by strong notes of black pepper, flowery hops, honey, cinnamon, coriander, camomile and earthy yeasts. Slight sweet upfront in the mouth. Again, strong notes of pale sweet malts, honey, camomile, coriander, cinnamon, black pepper and earthy yeasts. In overall, a light sweet taste with nice spicy and "hot" pepper notes followed by a mild and pleasant hoppy bitterness. Light body. Medium to low carbonation. Very smooth body. Peppery aftertaste. Damn good drinkability. Excellent drinkability. Excellent beer. Masterpiece.

Very nice. Good golden color, and long lingering spicy finish - almost like ginger, but with less kick. Not what I expected from a saison, but I would gladly have it again!

Pours hazy peach with a large white head. Aromas of honey, peach, flowery esters and gooseberry. Taste is rye bread, honey, peach, gooseberry with a peppery finish. Mouthfeel is slightly creamy and medium bodied with medium carbonation.

Opaque light gold, medium white head. Hay, grain, citrus and farmyard yeast on the nose. Medium bodied (!), sweet with sour notes. Yeasty, zesty, and finishes bit dry and spicy. Nice!

Bottle from Eataly Milano, kindly delivered by a friend, many thanks.Hazy orange golden color with medium white head. Malt, oranges, tangerines, coriander, other spices. Taste, oranges, tangerines, malt, coriander, cinnamon, peppery notes, allspice, ginger and much more. Dry, spicy finish. Very good refreshing beer.

Opaque hay coloured beer with a weak head. Smellmis peppery salty with sweet pungent orange, lots of spices. Coriander, flowers, grass. Taste is sweet and watery, honey dominates at the beginning with some citric orange, evolves into a fizzy watery spiciness. The pepper hotness hits at the end. Impressive to balance so many ingrdients so well.

Aroma of lime peel, koriander, cammila, siltyness and a hint of bbq coal. Slightly cloudy yellow. Tinckling starts. Cinnamon flavour staers, then fresh herbs (koriander and cammila are nicely occuring) and then there is a bit of pepper. Very round taste, nice body. Nothing is too much or too less. Great!
