Le Baladin Wayan is made of 17 different ingredients (barley, wheat, spelt, oats, rye, different types of hops and many different spices besides coriander. Teo calls it a "Saison" but it is certainly his personal definition of a saison. Aroma and palate are rather complex, ie it takes some time to find your way through it, so to speak. The different hops are barely noticeable. The balance and bitterness is by a high defree provided by those many spices some of which are very, very unusual in brewing. This quite unusual combination of spices and herbs greatly impacts the finish which again is very different from "regular" saison-style ales. Food pairings: Fish, salmon, salads, filet mignon and other steaks, Thai food.

Sample from tap @Baladin Milan. Pours pale yellow with white adhesive head. Aroma is a bit metallic, herbal. Taste bit watery but you feel the pepper in the back of your mouth. Not much body.

75 cl bottle in Teku (also tap at Baldin Milano). Pours a medium frothy white head; hazy orange/golden colour. Smells fruity/ripe fruit, wild yeasts, very spicy, floral and slighlty funky. Taste is grainy (is multigrain), apples, citrus (has orange zest), cinammon, gingery; low to medium/sweet, medium/high sourness, very sharp spicyness, especially in the end, with a very definite pepper note. Lively carbonation, sour and spicy finish, towards dry; almost any bitterness, a bit of cider notes. Characterized by the many different spices used, very refreshing, nice to be matched with fish/seafood dishes

Dobre, ladnie wygladajace piwo z lekka metnoscia oraz biala piana. Aromatyczne koloru jasno pomaranczowego. Bukiet slodowo zbozowy. W smaku lekkie ale o wyraznej nucie przyprawowej. Cynamon, kolendra oraz biszkopty. Slod lekko wyczuwalny takze chmiel jest delikatny. Wspolgra tu wszystko mimo tej delikatnosci.

bottle at mondial 2014, mtl. pours unclear very light yellow with a nice slightly frothy white head, good retention and lacing. fruity and spicy yeastiness, very peppery - white pepper but mostly black peppercorns, wheaty acidity, bitter herbs, pale and crispy cereals and maltiness - slightly linear though. lively to average carbonation, light body - watery, relatively dry grassy-spicy-very peppery finish. interesting effort..

Once again an exciting Partly cloudy golden beer from Baladin, this time a very spicy Saison. Taste and smell of pepper. Full-bodied summer beer with high carbonation. It s just before you sneeze by the smell sf pepper Delicious beer without the hops that are in focus

May 24, 2014. 750mL bottle at beerbistro. Clear golden yellow with floating particulates. White head. Sweet lemon aroma. Doesn’t seem to have aged well. I remember this being tastier, with no floating particulates. Still quite nice though.

0.75l corked bottle shared with The Tasting Crew. This is a light cloudy golden looking one, loaded with floaters and sediments. All this under a small quite disappointing off-white top. Smells a bit old. Mild yeasty and definitely fruity sweet. It has a nice peppery spicy touch to it. Lots of ginger and some cardamon. It just needed a little bit of temperature and time in the glass then it opened up. It’s a little it above average on the carbonation level this and it has a thin oily feeling in the mouth. Soft peppery spiced flavors. A good amount of sweetness here. Zesty melon and it lacks in bitterness. Not my cup of saison. A tad to sweet and perhaps even what I will call sugary sweet. 15.01.2014
