A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when its time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teos objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Heres how Teos system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when its time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

Shared bottle at Sigmunds place, bottle no 263926. ABV 14,5 %.Pours clear amber with no head at all. Aroma is malty with wood and Madeira notes. Taste is medium sweet, thick oily mouthfeel, brown sugar,alcohol,vinous, dark dried fruits,flat carbonated, lingering herbal sweetness, a threat this one.

Bottle 500ml vintage 2008 @ Patricks Pub og Restaurant, Kristiansand
Pours clear amber with no head. Aroma has notes of malt, caramel, alcohol, honey, oak, oxidization and dried fruits. Taste is heavy sweet and light bitter with a long sweet and oak finish. Body is full, texture is oily, carbonation is flat.

500 ml bottle @ Patricks. Clear amber body with just a quick fading hint of a head. Looks great anyway. Strong aroma of dry fruit, sweet malt, warming alcohol and caramel. Flavor is sweet malt syrup, dry fruit, caramel, brown sugar and warming alcohol. Fine body with a long and sweet aftertaste. Another fantastic brew from Le Baladin.

8cl from a large bottle at Gaasa. Pours amber with no head. Heavy caramel aroma with lots of sugar and dark dried fruits. Very sweet and tastes more like liqueur than beer. Still its quite nice. 8cl was enough, but it was quite nice. Dessert beer! (2012-08-03)

Bottle at Patricks. Red brown colour with an off-white head. Aroma is sugar, alcohol, malt, spices, raisin, honey. Flavour is sugar alcohol, malt, spices, raisin, oxidation. Full body. Very nice beer.

Bottle, at Patricks. More or less clear in the glass, amber in color, and quite flat. Very mead like aroma, with honey and some oxidation. Dried fruits, casked spirits, sweetness and some vanilla notes. The flavor goes in the same direction, its really vinous and tasteful. Lasting finish. Full body, almost sticky, pleasantly low on carbonation. 120614

Bottle. Pours deep amber with a tiny off-white head. Aroma of malt,caramel, alcohol and fruitiness. Flavor is sweet and malty with some caramel, brown sugar, oak and raisins. Full body, soft carbonation.

Bottle sample at Beer Enthusiast release tasting. The beer has no head (!), and has a clear dark amber colour. Based on the aroma, this could almost have been a liqueur with a touch of sweet berries, leather, dried fruit, marzipan, cognac and alcohol. Tasted mead recently on another occasion, and this reminds me really about it. Pretty sweet flavour that is full of caramel, liqueur tones, and a little vanlije. A sticky and silky mouth feel. This is a real beer for dessert, either to (a Crme Brle perhaps) or as a dessert in itself!

Sampled from 0.5l bottle @ Beer Enthusiast release party. This is a lovely looking glowing cognac/sherry-colored beer that has basically no head. The aroma is definitely present, and its really something! Fantastic sherry-sweet and really vinious with lots of dried red fruits, figs, roses, wood, gamy tones, honey, sweet tomatoes and it feels really really complex and delicious. I dare to say that it has no carbonation and it feels like this really thick, sticky and liquid honey-like thing in the mouth. When tasting it my taste buds almost goes bananas! Lots and lots of sweet sticky oxidized caramel, warming alcohol, its really vinious and vanilla-woody with dried fruits, fresh figs and dates. Amazing sweet flavors! Will definitely have this again (if I can get it) 23.04.2012

Bottle sample @ Beer Enthusiast Release Tasting, Bergen. 2008 edition. The finisher for the evening, and doubtlessly the most anticipated (at least on my behalf). Pours a dark cognac body, with no head to be seen. Not so strange, perhaps, since this has been allowed to oxidize to a large extent even before bottling. Nose has intense port wine notes with loads of dark, dried fruits, cognac, wood, hints of caramel and the classic caramelized Norwegian bread spread "brunost" ("brown cheese"). Taste holds lots of caramelized brown sugar, molasses, vanilla, wood, hints of bitter grass and the "brunost" again. Intense. The vanilla re-surfaces with some dark sugary notes in the aftertaste, which is long and borderline sticky. This is more a dessert than a dessert wine substitute, but I quite like it. Original, intense and very, very sweet. Looking forward to more from Le Baladin for sure. :-)
