COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions.
Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding.
Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when its time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created. Teos objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Heres how Teos system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when its time to bottle (it all depends upon the oxidation velocity).
This golden beer reminds of an enjoyable Madera or an intriguing Chateau Chalon of the French Jura.

Bronze medal at the World Beer Cup 2014, category "Experimental beer"

Editors note: the label says also "Riserva Teo Musso" and the vintage (year).

Bottled - vintage 2005. A red amber beer with no head. The aroma has notes of oxidation, over ripe fruits, spices, and Sherry. The flavor is very sweet with strong notes of over ripe fruits, Sherry, and caramel sauce as well as medium notes of alcohol and light notes of spices, leading to a sweet finish where the notes of alcohol, caramel, and oxidation lasts for a long time. Thanks Mike for this treat for my birthday.

UPDATED: OCT 11, 2010 Bottle 50 cl. Courtesy of Ungstrup. Vintage 2005. Clear amber golden with absolutely no head. Intense aroma of overripe fruit and honey - almost mead-like in character with the alcohol already showing in the nose. Very full-bodied, completely flat, intense accents of nuts, caramel flower pollen and overripe fruit - perhaps a little licorice also. No bitterness but a warming alcohol finish. 8/3/8/5/17=4.1 220309

Bottle 50 cl. RBESG Rome 2010. Clear, amber golden with no head whatsoever. I didnt find the aroma all that enticing at first - almost rotten actually - but with a little time the beer really opened up revealing pleasant and VERY oxidizid Sherry notes, wood and sweet tobacco. Very full-bodied, completely flat with a massive alcohol - like vintage Sake. Lots of oxidized woody flavours and sweet - almost sticky - caramel. Very warming alcohol in the finish. Amazingly sophisticated. 020610

Bottled. Deep ruby, no head. Aroma of madeira as well as soy sauce, like SA Triple Bock. Very sweet and hugely full bodied with viscous mouthfeel. Very intense. Meady menthe, intensely warming sherry. Faint notes of coffee. On some sort of edge between overly sweet and fantastic. This beer certainly grabs your attention.

4th June 2010. Bottle in the Bir & Fud Restaurant - huge thanks to the owners for this bottle on the house! Clear dark amber beer, zero head. Sherry like nose. Light soft palate. Delicious sherryish malt, sweet and smooth and a little fruity. A little warmth in the finish. A very very fine sherry!! And a remarkable beer. Light and very fine - very well done Baladin!

Unrecognizable beer, with sweet flavor, but without the good and rich malt flavor that was expected; insted it has a vegetables note, mostly in the aroma.

Reddish amber color; flat. Nice malt aroma, fruity, with just a touch of oxidisation and alcohol. The flavor is extremely sweet, malty, very rich; there is just a light oxidisation, a mellow feeling, with a touch of sweet nuts, toffee and raisins; in the final there is some wood, Very pleasant, with medium complexity. The final is sweet, caramelly, quite short, but also corto (Spanish). It doesnt reach the richness and complexity of the Silver and Copper.
