COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions. Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding. Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

Thanks to Hopstar for this brew. Pours amber with a faint white head that fades quickly. Syrupy palate that reminds me of mead or port. Flavor of caramel, honey, port, butterscotch and a faint clove hint to it. Alcohol was there, but not overwhelming. This was a 2004 bottle so it has had time to soften. Very well built sipper beer.

Sherry-like aromas, oaky with a lot vanilla. Pours reddish amber. Smooth and sweet, very oaky, cherries and dark fruits, port-like flavors with vanilla and sweet malts. So so smooth. Awesome beer!!!

Bottle. Sampled at dark lord day luckily as i never wanted to pay the price tag. Smells so sweet, like liquid candy and ripe dark fruit. Plum rasin, and glucose is everywhere in this beer. Thickly coats your mouth with lots of fruit sugar.

All I can say about this is wow.. This cost me $240 for a 6-pack case, but it was worth every penny. This is like a carnival in a bottle, large toffee popcorn aromas, some butterscotch, and cotton candy. Lots of dark fruit flavors, with sweet molasses, dates, a bit of tar, and rich alcohol to round out the finish. This was lovely.

Bottle shared with toncatcher. Excellent aromas off this viscous brown/amber pour with no head. Lots of sweet malty aromas. Raisin, Prune, Dark Fruit, Molasses. Sweet sweet sugar cane and more dark fruit flavor. Alcohol flavor turned to alcohol burn. Some cotton Candy on the finish. Very sweet and very good.

UPDATED: MAR 17, 2009 500 ml bottle. Shared at Jon (Padrefan’s) house. I think Toncatcher brought it. A orange-brown pour with minimal head. The nose was big and bold with fine brandy and cognac. The flavor was overtly sweet with cotton candy, rock candy, lightly roasted malts and some pears. The brandy so prominent in the nose did really materialize in the flavor. The mouthfeel is smooth, full and satisfying. The finish was long and semi-sweet with a bit of that brandy flavor making a re-appearance and nicely book-casing the beer. Overall: I don’t normally care much for sweet stuff but this one passes as quite good.

DocLock (5776) - Lower Pottsgrove, Pennsylvania, USA - FEB 28, 2008
Bottle from State Line. Pours turbid copper with minimal off-white head. The aroma is caramel malt, raisins, figs, mild spices, berries, and cognac. Tastes extremely sweet, in fact, the initlal dregs are very cloyingly sweet and I found it hard to continue until I let this one warm up a bit. By then, the heat vapors had emerged somewhat, so I drank it as a sort of Irish Mist/beer hybrid. The taste profile isn’t bad, but it was hard to get past the cloying sweetness. I think mixing this with a Cantillon would cause the Earth to explode or something.
