COMMERCIAL DESCRIPTION
A beer brewed and matured to 13.5% ABV going to 14.5% in next productions. Malts: Pilsner Durst, aromatic Dingemans, caramunich 140 Dingemans. Hops: Hallertau Hernsbrucker, Spalt Select and East Kent Golding. Brewing process: the wort is hyperconcentrated then boiled for two hous and half. Primary fermentation for 25 in steel vessels. Then after a sterile filtration (to eliminate primary yeast strains) the beer is transfered in a steel vessel with transparent membrane and a "oxygen hat". Afeter several tasting from 6 to 24 months later (it depends on the oxidation velocity, very inconsistant!) the brewer decides when it’s time to bottle in 50cl. champagne shape bottles with good quality cork. The production is very limited. Three productions brewed during two years will be available from October 2006.

375, 2005. Thanks, Hopscotch! One of the most complex, pleasant, and interesting beers that ever overwhelmed me with sugar. Loved it, but couldn’t finish it. My fault for opening on a hot day. Be warned. Pours a murky dark brown with bright caramel highlights. Headless, laceless, leggy, oily, sticky. Body’s super oily and sticky on the tongue. Oranges, sweet grape juice, caramel, toffee. Big thick sticky body, wow. Very sugary sweet--lots of complex flavors behind all that sugar. Could probably cellar for decades.

Mondiale 2009, a good place to try expensive Italian craft beers. This one had a small head, and little carbonation. I drank it but its style is akin to cough medicine.

Brown with a thin head, average retention. Aroma is very sweet with maple syrup, wood, alcohol and hops. Flavor is also very sweet with a lot of maple syrup and wood, caramel, fruits and hops. Full body with a liquorous mouthfeel. Excellent!

Bottle. Vintage 2005. Pours a clear amber color with a small off-white head. Has a sweet malty dark fruit and caramel aroma with some alcoholic hints. Smooth sweetish malty dark fruit and caramel flavor. Has a fruity malty warming dark fruit flavor with some hints of alcohol and caramel in the aftertaste. Very nice.

Bottle. Pours a ruby/copper color with no head. Aroma was sweet and boozy with dried fruit, vanilla, caramel, port, and has a hint of brown sugar. Flavor was silky smooth and quite sweet with caramel, brown sugar, dried fruit, raisins, port and alcohol with a sticky full body. Decent but to expensive.

Bottle shared by rustychiles...THANKS RUSTY!!! Not sure how I forgot to enter in this rating (although quite a few brews were presented @ the Hellbilly Tasting!!! Maple syrup pour with absolutely no head and minimal carbonation. Amazingly sweet...caramel, molasses, raisin, vanilla, and maybe even a hint of chocolate. Coats the palate like varnish on oak...interesting.

2004 vintage bottle from Beverage Castle (Tampa, FL). Pours a syrupy, menacing tobacco brown color with no head. Very light to no carbonation, but a slight pop from the bottle when cracked. Aroma is sweet and boozy with a complex array of ripe dark fruits, rum-soaked raisins, brown sugar, molasses, vanilla, wood, some vinous qualities. Flavor is sweet and syrupy with sweet toffee, caramel, ripe dark fruit, overripe apple, vanilla, wood, brown sugar, bourbon-like character. Generally medium body with a syrupy sweet, and strongly alcohol finish.

2005 bottle forced on the phx crew by rustychiles... rusty brown colored and absolutely still. it smells sticky... more exactly, it smells like oxidized barley wine mixed with tawny port... vinous, hot, chocolate, soy sauce, fig and vanilla. it tastes the same with the addition of some toasted nuts and coffee... along with being obscenely sweet and beyond rich into seizure territory. thick cloying mouth feel is not helped out by the lack of bubbles. interesting. not necessarily good though. 8/4/3/2/10/2.7
