The first beer released is the Wattle Seed Ale, which starts with a blend of Australian and European malts, creating a rich flavour base of caramel with a hint of chocolate. The smooth malt flavours are lightly hopped and then infused with roasted Wattle Seed, bringing a unique and authentic Australian flavour to this fine red ale. The result is an outstanding ale that boasts a smooth taste profile balancing its robust character, an ultimately rewarding yet distinctive beer.

Bottle: Clear mahogany with a fast-fading head. Strong vinous malts and toffees in the nose. In the mouth there are some pleasant roasty notes but it is dispairingly thin mid-palate. There may be a certain ’bushiness’ in the flavour spectrum from the wattle seed, but then that could simply be my imagination. There is also a noticable alcohol presence, which isn’t so bad beneath the overall roasty toffee flavour. But this really needs mroe body to work.

Clear reddish chestnutty with a thin but densely bubbled taupe head. Aroma is a bit doggy with faint sweet and sourness and a hint of earthy wort. Taste is slightly sweet with caramel and again a bit worty with a numbing edge of cola and carbonation. $2/12oz

Has a very schwarzbier quality to it- malty, roasty and sweet. Figs and carmelized fruits with a fizzy carbonation that rises up as soon as you sip. Finishes with smoke and walnuts. The fizziness for me is a little off-puting. Could be more robust- I think they skimped on the wattles. I like the price though- $4.99 a six at Metcalf Discount Liquor in Overland Park Kansas.

Raisin colored body with a small tan head. Sweet malt nose mixed with alcohol. Flavor of fruit and caramel malt. Finish is sweet.

Pours an amber shade of garnet with a small ring of white foam. The nose has a textbook English strong ale aroma. Nutty roasted caramel, almonds, toffee and just the slightest hint of chocolate. The taste is somewhat unique with the wattle seeds giving its own brand of roasted nuttiness. This is very smooth, with some figgy fruitiness, toffee sweetness and just the right amount of minerality in the water. Well done, unique and interesting.

An interesting attempt but not one I would be rushing back for. Aroma is different but probably because you are looking for it. Not that keen on the after-taste as it tends to linger.
