The first beer released is the Wattle Seed Ale, which starts with a blend of Australian and European malts, creating a rich flavour base of caramel with a hint of chocolate. The smooth malt flavours are lightly hopped and then infused with roasted Wattle Seed, bringing a unique and authentic Australian flavour to this fine red ale. The result is an outstanding ale that boasts a smooth taste profile balancing its robust character, an ultimately rewarding yet distinctive beer. Native Range. Unique taste or superfluous curiosity? I thank brother Jer for the gift case for Christmas--as asked for, this is something I had not come across in NJ... a darker malty brown semi-transparent body with a simmering off-white head that resembles iced tea in its presence... first nasal impressions are perfumy, with soft esthers as unale-like as could be... in fact, the "wattle" in the scent is as unique in a beer as I have had! Medium to full-bodied ale that has a nice body, substantial but not heavy, drinkable but not watery... malts well in the mouth and presents some hints of sweeter sugar--no hop in this (is that supplanted by the wattle?)... quite a sessionable brew that requires a bit of concentration in its enjoyment... of the four selections in its case, Barons Wattleseed scores major points for being crisp without sacrificing body and having balance in its smooth flavor... again, thanks, brother Jer!

UPDATED: NOV 20, 2006 I have had this a couple of times but never seemed to have been in a position to take notes. So with try number 3 I can now rate this. My sample must have been a bit of an exception to some as it presented beautifully in the glass with a good creamy head. Like a number of others I wasn’t sure what the wattleseed would impart but upon sampling both the nose and taste, I immediately thought that there must be some wattleseed in the UK, especially lurking around the Theakston brewery. This is a Peculier beer indeed, with a definite note of molasses and toffee balanced well by a good hoppy background. Little nose is imparted by the hops but the malty aroma and good solid mouthfeel marks this as an experiment that has done well. I think this is a solid performer that is better than a great number of Aussie beers.

This looks like Coca Cola in the glass. Nice yeasty aroma and pleasantly robust flavor. I’m not sure what wattle seeds taste like, or if it is good idea to eat them, but this brew tastes a bit like a dunkel or a schwarzbier - roasted grains, caramel, smooth, with a hint of herbs, and a mild aftertaste. Very nice.

Appearance: Pours a clear, dark amber body with a small, fizzy off-white head. Smell: Light aroma akin to an herbal tea with an earthy, roasted nuttiness. Taste: Altogether earthy, nutty flavor with a very subtle caramel sweetness. Finishes crisp. Mouthfeel: Medium-thin body. Fine carbonation. Drinkability: Wattle they think of next?

This beer pours a deep mahogany with a thin white head leaving no lacing down the sides. The aromas are coffee, malt and spices. The flavors emulate this. It is a little fry which is kinda surprising I guess. Plenty of lively carbonation though. I really liked this beer. It is different. Cheers!

What in God’s name was that?!? Kinda reminded me of those Italian pinyon nut cookies at Christmas. This beer was so rich, I even had a hard time finishing it. Pour was a deep amber with a medium head. Aroma was, well, wattle seed which is somewhere between hay and honey. Very distinctive. Flavor was, again, wattle seed...sort of a combination between tea, carmel, and butter. Again, think pinyon cookies. The beer was good. Would I drink it again, yes. But very, very strange stuff...

Bottled (of course). I rather liked this. Pours a reddish darkish shade w/smallish head. Aroma is some chox & malts, and somethng else - Wattle? Who knows what wattle smells like outside of Oz? Not me. Taste I guess is similar but faintly herby? SOme very mild hops. Not too thick, not much aftertaste. Enjoyable.

Dark chestnut color with a medium sized white cap and lots of spotty lacing, the color is rather intriguing. Pleasant, abundant aroma of sugary raisins and sweet breads with fresh flowers and a hint of milk. Smooth on the palate with a nice filling body. Lightly sweet and has a great rolling creamy finish. This treat reminds me of a bock beer in many regards. Blended flavor of dark sugary fruits, and buttered bread. Nice floral taste coupled by some sweet spices. Unique flavor that is also familiar, over all it’s a touch too sweet for my liking. Still comes off as a nice beer in itself.

Bottle. Dark amber pour. Small scattered tan head. Nose is nutty and slightly hoppy with a nice caramel sweetness. Taste is more caramel, sweet malts, nuttiness, and spicy hops. Very tasty! Body is medium with dense carbonation. Ends with more caramel, sweet malts, nutty flavors and spicy hops. Some dusty cocoa here as well. Rather enjoyable beer!

I’m really quite surprised...I mean i didn’t even know what a wattle was before tonight. Very nutty and almost roasted. I really enjoyed it. It’s different and I can respect that. Good work Barons....
