COMMERCIAL DESCRIPTION
Eingebraut wird unser Baumburger Klosterdunkel nach alter Rezeptur mit 12,9% Stammwürze. Dies führt zu einem Alkoholgehalt von 5,5% Vol.. Ganz nach alter Tradition wird zum brauen unseres Dunklen nur dunkles Malz verwendet. Es wird nicht zusätzlich gefärbt oder verändert. Wie schon zu Opaszeiten wird ein aufwendiges Zweimaischverfahren angewandt. Auch wird dieses Bier, wie früher schon, nicht filtriert. Allein durch kühlen und lagern wird die Klärung (Entfernung der Trübstoffe) erreicht. Deswegen führen wir im Zutatenverzeichnis auch noch die Hefe auf, obwohl das Bier soweit geklärt ist, dass man die Hefe mit blosem Auge nicht mehr sehen kann. Durch dieses aufwendige Brauverfahren ist es uns gelungen eine wirklich Bierspezialität nach traditioneller Rezeptur herzustellen, wie es schon da Opa getrunken hat.

Bottle by 19.09.12. Caramel nose with some dirty malts and light yeast. Dark brown body with lightly orange highlight and a short tan head. Sharp, somewhat sour taste, light caramel/mocha under sticky malt, dark bread crusts and toasted brown sugar complexities. Smoothed edges on the fullish body. Fun to see the ingredients in Sütterlin, too.

Geruch süßlich, malzgetreidig, nach Stroh. Süßmalziger Antrunk. Mitte malzig-bitter, aromatisch und angenehm süßlich. Im Abgang hält sich die Süße im Verein mit röstig-bitteren Aromen. Gefällt.

0.33 L bottle, shared by KnutAlbert. A layer of blond bubbles, upon a bright amber body with a reddish tint. Fruits, caramel and a marzipan-like nuttiness to the nose. Rounded and complex flavor of caramel, bakery, nuts and fine fruits. Bitterness for balancing only. Well-bodied and soft in the mouth. A really tasty and interesting Dunkel.

Small yellowish beige head doesn’t last. Clear brown body. Papery caramelly aroma with earthy notes. Dry-sweet earthy caramelly dusty taste with grainy notes. Mid-bodied. Mild, soft mouthfeel. Dry bready roasty caramelly aftertaste with earthy notes. Nice! Has character. (0.33l bottle shared by KnutAlbert.)

330ml bottle. Slightly cloudy reddish dark amber with small off-white head. Dark malt aroma with nuttily notes and a fruity touch of cherries. Moderately sweet malty and nuttily taste, accompanied by a decent dry hoppy overtone. Not bad.

Bottle from Bieershop Bayern. Glowing amber, caramel nose. Burned sugar, subtle bitterness, opens into a complex palate. Nuts, grain, bread crust. Very pleasant, rich for the low ABV.

330 ml bottle. Deep ruby copper color. Clear. Coarse off-white head. Caramelly nose with toffee and a little raisins. Crisp grainy bitterness lingers in the finish. Quite complex. Nice bready flavours. Thanks, KnutAlbert.

Bottle: slightly hazy, amber coloured, mid-sized - quite stable - off-white head with a little lace, caramelly-fruity nose with a mineralic touch; light to moderate sweet-bitter flavour, pretty light bodied for a beer of 5.5%; caramelly-fruity finish, followed by impressions of milk-chocolate in the aftertaste. O.K., not earth-shaking.....
