Commercial Description:
Name changed to Dancing Trout as of 2007. Trout Slayer is called "Crystal Weizen" in Bavaria and is the filtered version of our Bayern Hefeweizen and has a more pronounced wheat flavor and a golden color. Bayern's Trout Slayer is hopped moderately with Hallertauer Perle (Germany), the alcohol content is 5.6% alc./volume. We use malted wheat, two-row Harrington Pale and caramel malt (14° Plato o.g.). Technically speaking, you could call this beer an ale because it is top-fermented. However, this beer has been cold fermented and the maturation time is as long as lager beer (a full 28 days instead of 8-10 days like an ale).

Bottle poured a hazy golden yellow with a small diminishing off white head. Aromas of wheat, lemon and a hint of yeast. Palate was light bodied and smooth with a slightly dry finish. Flavors of wheat, straw, light citrus and a hint of spice with a smooth lightly dry lightly bitter finish.

Appearance: Pours a clear, orange-yellow body with a teeny tiny, white head. Smell: Pale malts, some toasted wheat malts -- no banana or clove as they’ve both been replaced with heartache. Taste: Sweetish pale malts and toasted wheat. Again, no bananas or spice. Extremely mild hop bitterness. Pretty much the same until the brief finish. Mouthfeel: Medium-thin body. Mild carbonation. Drinkability: A bit too filtered, I’m afraid. Restrained and lessened phenolics, sure, but this thing’s been wiped clean.

A light gold pour with a white head and lace. Slight peppery aroma and almost mediciny aroama but not really in a bad way. Cream corn taste with a funky dull cloyness that just keeps me from really liking this beer. Thin and foamy. Not a beer I couldn’t drink just a beer I find to be off somewhere some how.

On tap at the NABA fest in Idaho Falls. I was not quite sure what style this beer was, it seemed like a lager, but more. A good kristallweizen; smooth and easy going, some light citrus elements along with a moderate bitterness from hops. Pours a light gold with a medium white head. I think this beer would be awesome with some food pairings.

5/20/08 On draught at the Dog and Pony, Renton, Wa. Aroma is faintly sweet, with low hop flora. Appearance is clear gold with a solid white head. Flavor is super sweet, quite citrusy, with low bittering and no citrus tang. Mouthfeel is medium bodied with a dry finish. Overall, good, but may be too sweet to have much.

Bottle courtesy of kyzr: Pours a transparent golden with a thin, wispy-lacing white head. Aroma of mildly sweet pale malts and a touch of light fruits. Body starts with a mild sweetness and some wheaty notes and fruity esters. Finishes smooth and lightly sweet. A decent Kristallweizen.
