Hefeweizen is an unfiltered classic in Bavaria (“Hefe” means yeast, a small amount of which remains in the beer). In 2004, Bayern Brewing introducing a dark Hefeweizen, otherwise known as a Dunkelweizen (dark wheat), to the line-up: Dragon’s Breath Dark Heff. Dragon’s Breath Dark Heff is mild in taste, unfiltered, and 6.0 % ABV (Alcohol by Volume). It is moderately hopped with Bavaria’s preeminent Hallertauer Perle hops and is cold-fermented, eliminating any harsh aftertaste. Jürgen Knöller, Bayern Brewing’s proprietor and Brew Master, brewed this beer style at four different breweries in Bavaria in the early eighties. His Dark Hefeweizen won Gold at the prestigious German DLG (German society of Food and Drink Producers Association) annual competition consecutively from 1980 through 1985. Jürgen’s same brew, introduced at a major U.S. beer competition for the first time under the label “Dragon Breath Dark Heff”, received the Silver Medal at the North American Brewers’ Association 2008 Beer Awards. Most recently, Dragon’s Breath won Gold at the 2011 US Open Beer Tasting Championship.

From bottle, the pour is cloudy with a medium to dark dirty brown. The head is white with slight brown overtones. The head also remains present on the beer after a minute and more. The aroma is malts, hops, and wheat. The taste is rich initially, there’s a soy sauce and malt flavor and a sweetness in the back end of the beer. The finish more sweet with a good combination backbone. The mouthfeel is medium.

355ml bottle. Pours a hazy brown with a medium, frothy, long lasting, beige head that laces nicely. Sweet aroma of wheat malt, caramel, banana, yeast and light clove. Sweet flavour of wheat malt, caramel, light fruit, yeast and clove with a smooth, dry finish. Medium body with an oily texture and soft carbonation. Ok.

Aroma: Light coffee, wheat, yeast. Palate: Light-medium. Flavor: Smooth coffee, grain, "graham cracker" and milk chocolate, yeast. Finishes with moderate bitterness and very clean. Comment: A good drinker with plenty of flavor. Sessionable.

Delicious brew. I’m not a huge Hef lover, but this dark version is worth the calories!

From a 12 oz bottle in Gardiner MT. Pours a clear cola brown with an ecru head. Smooth and tasty on a warm summer day.

12 oz pour from refrigerated bottled into a shaker pint. Dark brown and mostly opaque with a muted white head. Medium body leaning on the lighter side. Interesting balance of caramel and banana notes. Roasty. Closer to a dry porter than a hefe, I’d say, but I can see the hefe qualities. A little bit of clove hidden in there under all the caramel and dark malts.

This is hands down my favourite beer. I;m not one for the technical aspects of beer, but the dark, sultry aroma and equally dark appearance make this beer delicious before the first taste. It runs smooth and somewhat thick over the tongue and leaves behind a pleasant aftertaste that goes well with meaty foods. I bring this with me camping and out for BBQs regularly, though now that I live outside of Montana it is unfortunately difficult to find.

Poured from bottle into a pint glass Appearance – The beer pours a burnt orange-red mahogany color with a one finger head of pure white foam. The head has a good level of retention, slowly fading to leave a good level of foamy lace on the sides of the glass. Smell – The aroma of the beer is heaviest of a slightly burnt wheat bread smell with a strong showing of yeast. There is a little bit of a banana and a bit of a coriander and clove smell as well. Taste – The taste begins with a caramel and wheat bread taste with a bit of roasted malt mixed within. Some dark fruit flavors are there as well, along with some of the banana that was detected in the nose. Other light coriander flavors come to the taste later in the profile, and with the other flavors, ends up leaving a rather smooth, darkened wheaty flavor to linger on the tongue. Mouthfeel – The body of the beer is on the slightly thicker and creamier side with a carbonation level that is average. For the wheat and darker flavors of the brew the feel is rather nice and with its carbonation level it makes for a very easy drinker. Overall – A pretty nice drinker overall with a good blend of wheaty and darker flavors all while keeping a good drinkability.
