COMMERCIAL DESCRIPTION
On our grandparents’ farm, our grandmother would brew a grègue of café noir every morning for our grandfather’s pre-dawn breakfast. At the end of each week, after the obligatory Sunday dinner, she would brew numerous pots of it. Each and every one of the adults would then sip demitasses of the strong black coffee, laughing loudly and speaking French even louder. We wanted to create a beer that paid homage to what café noir meant to our French speaking ancestors. Café noir was more than a cup of coffee – its presence conveyed love and appreciation, and expressed a cheerful welcome. We use specially roasted German malts and select American hops which provide our LA-31 Bière Noire a small bite of noble bitterness and a dry, French roasted coffee flavor. It goes great with grilled steaks, hamburgers, or sausage po-boys, any spicy blackened Cajun dish, or a dinner table surrounded by those you most cherish. À votre santé.

Poured jet black with no head and no lacing at all on the pint glass. Aroma was roasty, coffee, and bitter sweet. Taste was dark chocolate and coffee. Palate was way too thin. This beer was nearly as thin as water and appeared to be under carbed. Overall not a bad beer, drinkable, but not great either.

Pours dark with a huge tan head. Heavily roasted aroma and taste but a bit lighter and cleaner than "coffee" conveys. A little different without trying too hard.

Wonderful flavors! I love this beer from Lazy Magnolia!! I am a fan of darker beer, and I would rate this as one of the top three of my favorites. Slight coffee flavors, but not too much.

Bottle. Dark brown, almost black with a thick, creamy head. Immediate taste of strong coffee followed by a dark-roasted malt and then lingering taste of hops. Very rich flavor with a nice aftertaste; smooth and a bit sweet. Different and very nice

NOTE: drank this in a shelf glass at Ye Olde College Inn, New Orleans, La. Bayou Teche LA-31 Biere Noire has a creamy, beige head and a black appearance. The aroma is mild, but one can pick up dark-roasted coffee and malts. Taste is dark-roasted barley malt, coffee, molasses, and just a touch of hop bitterness. Mouthfeel is medium to heavy and Bayou Teche LA-31 Biere Noire finishes pleasant, easy drinking, and mild. Overall, this is a very nice ale. RJT

12oz bottle. Pours dark chocolate brown with a small fizzy beige head that recedes quickly to a tiny collar with no lacing. Aroma is pretty nice with some heaviliy roasted black malts with more sweetness than I was expecting with some caramel apples. Taste isn’t quite as nice and has less roastiness and more sweetness. But the sweetness also has an odd metallic character. Bitter finish. Light bodied for the style with low carbonation. It’s not a bad beer but certainly not in the league of some of the best schwarzbiers our there.

Bottle sampled at the Pig. Pours very dark mahogany with a small tan head that disappears quickly. Aroma is roasted malt, some sweetness. Flavor is roasted malt, more sweetness than I’d expect for the style, a bit of smoke and dark chocolate plus some ashy, metallic notes. Mouthfeel’s a tad thin. I’m intrigued; would definitely try again.
