Webster’s Dictionary defines apex as the highest point, the tip or climax. This experimental IPA allows our brewing staff to play and search for that ever elusive new hop blend and balance. Our brewers are eternally searching for the perfect Apex.

Tart musty fruits such as pineapple, mandarin oranges and lemons are present in the nose. Nicely balanced sweet citrus flavors with a mild tartness. Some green apple notes and a light unpleasent tinny character. Overall very tasty.

GABF ’05. Clear golden body, white head. Orange-citrus and light caramel malt in teh aroma. Bright, hoppy flavor with lemon-lime citrus; quite bitter. Basic crystal malt backing. Great hop flavor on this one. Spicy, resinous finish.

BBB63 (5023) - La Porte, Indiana, USA - OCT 3, 2005
GABF 2005: Clean golden hue with good lace. The nose detected some citric fruit, piney, dusty yeast, and butterscotch esters. The taste was pineapple and fresh hops with a bready background and metallic finish. The feel is firm, crisp, and dry. While it was enjoyable and refreshing enough, I still felt it was missed that spark. Surprised to find out it is a IIIPA and 8% ABV, I didn’t detect that.

(GABF05) Clear straw body with off-white head. Aroma is medium sweet, pine, grapefruit, light pineapple -- quite bitter. Light-medium body, light resin.

Tap @ Bistro Double IPA Festival. Medium golden color with a diminished head. Lighter than most of the other double IPAs I tried this day. Some bitterness at the finish but somewhat of a disapointment.

(on tap @ Cato’s) beer a resonably bright, pale amber with a short white head that laces well. initial hop aroma immediately swallowed up in a huge wave of Diacetyl. flavor is much the same, with a sickly buttery sweetness barely balanced by the mass of hops. the beer absolutely covers the mouth with a slick pad of butter that gets worse as you drink it. I wasn’t going to rate this beer, as I considered this an aberration, but figured I’d let them have it after they ignored my very polite e-mail about the problem. there is no excuse for letting beer this bad out into the market.

Tasted at the 5th Annual Bistro 2XIPA Fest. Medium orange color. Small head. Aroma is malty, orange and floral. Lots of buttery flavors. A medium bodied Imperial IPA. Malts are fruity and sweet. A touch of orange and grapefruit. Lots of buttery flavors. Hops are piney, citrusy and grapefruity. Touch of alcohol bite/oiliness. Nice balance. Smooth taste. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly bitter. OK, but a slight off taste.
