Commercial Description:
Webster’s Dictionary defines apex as the highest point, the tip or climax. This experimental IPA allows our brewing staff to play and search for that ever elusive new hop blend and balance. Our brewers are eternally searching for the perfect Apex.

On tap at Stone Bistro. A nice IIPA. Gold/orange pour, with sticky off-white head. Piney hops, sweet caramel malt, biscuits, floral notes, citrus, and pineapple. The hops are very fresh and bitter. Excellent!

On Tap @ Callahans. Hops, Hops, Hops. Classic West Coast Super hopped IIPA. A little sweeter than I would like, but that’s my only complaint. I could go for a Keg of this stuff.

Growler from Craft Ale, and a pint at Capone’s, my two current favorite beer hangouts. The pour is dark straw, more toward gold than brown, with 1-finger of well retained off-white head. The nose is heavy piney hops, caramel malt, some fruit, peppery spice, tangerine. Tastes assertively hoppy with a good malt balance, and some finishing fruit. Well incorporated alcohol makes this one very easy to drink, and a damned fine IIPA. Give me another growler of this one any day of the week, and twice when my wife isn’t around.

on tap @Capones–pours a white head nad gold color. Aroma is nice pine/citrus hops, secondary sweet medium malt. Taste is sweet medium malt-caramel, then pine/resin hops with some bite.

Clear golden orange with a fizzy white head. Big grapefruit and pine aroma and taste with butterscotch dominant and a slightly soapy over hopped taste.

On draft at TJ’s Everyday, Paoli. Served in a snifter. Poured slightly hazy amber with small head. Sweet with lots of resinous pine flavor. Surprisingly thick and malty. Nice offering.

Dark orange/amber. Super frothy, lacey off white head. Orange ribbon candy nose with spurts of caramel and spice, plump, juicy orange flavors with rindish bitterness in the finish. Fairly sweet and candy-like..flavors are actually quite nice. Slightly syrupy but not overly so, especially considering the sweetness here, which really takes those citrus hops and morphs them into orange candy. Really hot beer though..maybe not initially, but the throat and stomach feels thr warmth, almost burn quite quickly.

On tap at stone. Clear amber with fluffy white head that disappeared quickly to a tight ring. Nose is sweet hops with a bitterness. Similar to Green Flash IIPA but not nearly as strong. Flavor is same pungent sweet sharp hops as above. Lots of pine and citrus with the strong sweet hops. If you like this style, as I do, it’s a good brew.
