COMMERCIAL DESCRIPTION
A custom blend of the beers of Bear Republic, Cuvee de Bubba is refermented in oak wine barrels using only the wild micro flora and fauna native to the Alexander Valley. A bouquet of stone fruits with a complex flavor profile of malt, tobacco, and cherry pie sourness.

Cuvee de Bubba won a Silver medal at the 2012 Festival of Wood and Barrel-Aged Beer in the Wild Acidic Beer category.

Lightly hazed amber with a thin cream colored head. Major oak/wood notes, light cherry, blueberry, hints of stone fruit, finish is a combination of sour and bitter.

From a tap at the brewery.At my first few sips I thought it was a bit too sour and now at the half way mark it has a dark berry like wine taste .It doesn’t flesh out as good as Cuvee De Tomme which I thought of this beer when I saw it on the list .

On tap at Taps in Petaluma. Pours a reddy brown color with a bit of head. Sour aroma. High level of sourness but it tastes a little bit like what I recall Tang tasting like.

Sample at Rattle N Hum. This beer is a dark orange color with a medium thick off-white head that recedes gradually. Small patches of lacing on the glass. Fruity aroma with notes of malt and yeast. Medium body with flavors of tart fruit, peppery yeast and malt. The finish is fruity up front with an earthy yeast aftertaste. Decent overall.

From bottle at Jupiter during Sour Sunday 2014. Clear amber with a small head. Aroma of cherries, oak, funk and red wine. Not a bad one but a bit on the thin side. Fairly sour finish.

Tap (Bear Republiv): slight haze, brown with low to medium head. Huge lift of something unpleasant. Dominated by chemical and stone thing woody or herbaceous. Dry, sour, bitter and phenolic. Dense and long Bloody unpleasant chemical or brown spice. Bacterial spoilage was good but dominated. Maybe a strange Brett character.

On tap at Bear Republic, pours a hazy amber orange with a small beige head. Aroma is very complex, with loads of wild yeast, oak barrels, and some lightly tart fruits. Flavour is exceedingly complex, full of an amazing blend of wild yeast, followed by oak wood barrels, and very subtle lightly tart fruitiness. The wild yeasts create an amazingly complex and elegant flavour profile. Highly drinkable, not revealing any of the 9%. Awesome stuff.

VEry mildly tart and sour, more of a funkier brew, very light and subtle, couldn’t appreciate it enough.
